OMG..."We fed 55,000 people during hurican harvey...in 11 days!" Thats 5000 people per day! and @8hrs per day aprox thats 625 people...per hour!! You sure can cook anything just use the damper. May add a little more wood. 300 to 350 degrees would be easy Specially on the first chamber or two nearest the fire box.
It's really cool they use it for charity and have fun with it. I wouldn't care to feed wood into that giant monster myself. 😳 I almost never build a pit longer than 72 inches. The few I have built longer than that have all been completely insulated and custom built for restuarants. So they use a lot less wood and used day-in-day-out a better long term investment. But the various appropriate materials to insulate them with are really expensive. And so was the roll form machine I purchased to turn angle iron into flanges compared to the homemade one to roll plate sheets. 🤷♂️ But it's just a hobby that pays for itself I enjoy doing on weekends. I married into a big family so we are usually cooking on one while building an entirely different one.
Hence the reason why he has to have escorts of the size a d weight. Being all steel and the stretch wheel base it prolly is well over the alotted WEIGHT LIMIT. So im sure special permits are being used. However he is prolly getting exempt from any permits since he does alot of charity work...
