Tbh the pan actually needed that excess charred flour on the plate so it doesn’t melt down onto the oven when they bake but they also needed to clean it a little because they needed the holes to circulate air underneath it

I showed this to my husband that owns a restaurant here in Yokohama. It’s meant to be charred, they don’t clean it for very good reasons. Apparently it’s for flavour, heat retention and so flour doesn’t stick

As a former pizza store worker this is like watching someone clean your perfectly seasoned cast iron pans with steel wool.

From working at a Papa John's, I can tell you that we never wash those pans (we call them screens). We will run them through the oven if we drop them on the ground, that's how we clean them.

As someone who's worked in a pizza place, we used those exact screens and I've seen new ones. They have a black coating because, I think, it's non-stick. Also, the stuff stuck on it works like seasoning on cast iron cookware.

Should have tried The pink stuff It’s cleaner and yes it’s actually called that also I would have tried baking soda and peroxide

As a pizza hut employee I know exactly what this is, those are the hardest thing to clean, no matter how hard you try you're never gonna get it to look new, that's why we don't clean them like that, we just throw them in the dishwasher and it gets everything off and sanitizes it

Bruh, every cook knows that it doesn’t need to be completely silver for it to be considered clean. It wasn’t clean in the first place, don’t get me wrong, but it’s also important for it to be black.

That is a Pan that they cook the dough products on. The stuff covering it is the seasoning. It gets put in a dish washer and sanitized everyday. Plus it gets put though a 450° oven for at least 7 minutes so, it's perfectly fine and it's as intended.

3:15 Acid from the vinegar rusts metal. Baking Soda is a base that will neurtalize the acidity of the vinegar. That's why your pan rusted. Even though she probably rinsed off the vinegar, there was still some likely left behind that allowed the metal to oxidize. That's why people who use vinegar to remove rust from cast iron pans will cover their pan in baking soda or soak it in a water and baking soda solution to ensure there is no acid residue left behind when they are done.

We always use sugar soap for really burnt/stain pans and pots, works wonders!

Hey I was lucky enough to get one of those pans left in my pizza box a couple of years ago as well. And it took me about two or three days of heavy duty scrubbing to get it somewhat clean but never got clean all the way. The grated holes are perfect for heating up frozen pizzas. I love it. Too bad we can't buy those in the store. I've looked. To clean it I used a wire brush, like for cleaning bbq grills.

it's called fond, it adds a lot of flavor to the food it's cooked on. the reason why they don't remove it is because it keeps the flavor on it.

What was on it is whats called a patina if i am not mistaken. I am pretty sure its a good thing for pizza and other such things, not entirely sure tho

From someone that worked at multiple pizza places we drop those pizza trays all the time and put them to go in the over to kill the germs they never ever get washed.

Pizza screens are supposed to be a bit black kinda the same way a cast iron is seasoned ya know. But yea when it gets to that point normally we throw them away and get new ones. It’s a very cheap metal and it always comes in big boxes of many. (Also even tho that buildup of flour and other burnt stuff is a bit nasty. The heat of the oven will most likely kill all the bacteria

Wow. Love the video. I know it's a bit late but if your oven has one of those self-cleaning modes, you could have stuck the pan in during and all that black stuff would have turned all that into ash. We accidentally left my well-seasoned cast iron in the oven during self-cleaning and it was bare metal when we took it out.

I found that using those metal scrubbers work extremely well for stuff like this literally just takes a bit of muscle and thatsnit

While it has *far* too much of it, that's seasoning. You put it on cast iron pans and such to keep things from sticking. Its mainly from stuff like flour or carbonized food.

Yes there not supposed to clean the pans with water supposed to throw them out and get new ones witch I think is a waste but every pizza place is like this but me I use a poker to poke holes and put it thru the over. The reason we can't clean it is there's a coking oil in the pan that keeps it from rusting and over years of flower and oils and heat from the oven makes it look like that.

if you go to wood oven pizzeria's some have never been cleaned for over a century. Case in point, I worked at Sir Pizza in Rochester MI circa 1983-1995 on and off and they still have the same cookware I.E. screens (what you've been cleaning) and deep dish pans. It's called seasoning.

I know how hard it is to clean these. Used to work at a small time retail shop where we have an air fryer oven and we do sell fast foods. At night, we had to clean everything, that includes the oven and it's pretty hard to make it clean. Those black, charred stuff are basically fat that were stuck and burnt on the surface and it is impossible to clean it out even with the provided chemicals and the company insists on using their own method to clean the oven (basically, they ignore the instructions on the chemical which says you have to spray and then let it be for around 15 minutes before scrubbing for it to have the nest effect). I know it all too well cos I am the one always stuck with oven cleaning and following the actual method actually made my job easier but yeah, you cannot clean out all the black stuff. There comes a point where you gotta throw it all out and just buy a new one.
