Ramen is one of life’s great comfort foods. I remember on one of my trips I was in Shibuya on a late weekday afternoon feeling famished. I found a ramen place on one of the side streets around 4PM and ordered just a simple ramen in broth with nothing else in it. I was amazed at how nuanced the flavours were and how satisfying something so simple was. That experience so epitomized what is so special about Japan.
I couldn't agree more. This version that Hikin' Jim made with the chicken, dried tomatoes, and basil was amazing. Of course, now you have me hungry for ramen. P.S.
