One of the questions I get the most...What is your white cake recipe? In this video, I'm showing you how I make a moist and delicious doctored mix cake using egg yolks! I prefer to use the whole egg when baking. This inevitably turns the batter yellow. You'll learn how to get the batter to be white, how to bake and wrap them to freeze.

I love the extra yolk in the cake. The extra fat adds extra moisture 👏 When people try to shame me about using doctored cake mixes I simply say a cake mix is just pre-measured ingredients.

I’ve been using your pan grease and doctored cake mix recipes exclusively for about a year and have perfect results every time. I’ll start adding the extra egg yolk (awesome tip) and LICE the tips on getting a white cake batter. Oh my gosh so could just hug you for all the wonderful tips you share.

I followed this cake recipe exactly for a wedding reception for 50 people, and it was delicious!! I baked wedding cakes back in the mid-seventies and they were NEVER this good. Having your example and exact instructions are a game changer. The batter tasted and looked so much like my grandmother's "scratch cakes". I got so many wonderful compliments, and I gave you all the credit. Thank you sooo much for sharing on RU-vid!!

Thank you for the tips. I always feel bad about disposing the yolks when I make white cakes because it’s wasteful, so it’s nice to see a way I can avoid that. Even though I always save the yolks in a bowl with the intention of cooking with them, but let’s be honest, I forget they’re in the fridge lol. What is it with the stereotyping of “cakes must be made from scratch”? How “from scratch” are they expecting anyway? Are bakers supposed to grind their own flower, or milk the cow and churn our own butter too? I guess what I’m saying is, honestly, a cake mix is no different then buying just another ingredient from the store. I like mixes because all they are doing is saving extra steps and giving a delicious, consistent result. So keep up the good work!

☝☝THIS!! I'm cracking up!! 😂😂 I think the same thing. Adding mix is akin to adding sugar or flour. There is a margin of error when you use a cake mix based recipe that isn't there with scratch baking. And you're right, I should stop talking about my scratch pound cakes because I don't milk the damn cows! 😂😂

I love using a doctored cake mix, and the Super Moist white is my favorite brand also! And thank you for posting this, it gives me another one to try! Years ago One of the brands(I think it was Duncan Hines) had a wedding cake booklet you could order. It starts with their white cake mix and you add extra. If I’m using their recipe, I do use their brand, but to just make a white cake, I always use the BC. Everyone loves them! I also have a red velvet cake recipe that starts with a yellow cake mix. It tastes just like my moms that she made from scratch. When I make her recipe, it tastes like cardboard! I found this recipe in a Mennonite cookbook. I figured if it was good enough for them to add to their recipe book, it was worth a try, because they make some delicious cakes! It’s so easy! A friends grandson was in a father son cake bake off. I gave them this recipe because it was super easy and they won first place!

What a friggin BRILLIANT idea! Love your buttercream recipe so wanted to try this cake. I need to make my cake gluten free so tried using gluten free substitutions measured to the same grams for cake mix and flour. It came out a little heavy/chewy. Have you ever made GF cakes? Any suggestions for making it lighter in texture?

It can withstand light carving (like tapering it to be narrow on the bottom), but if you. need to do intricate carving, you'll want to use a denser cake recipe.

New subbie here. I just found you today. I made many wedding cakes years ago but hubby was sick and then died. I remarried 8 1/2 years ago and moved from Calif to Fl and I dragged many boxes of pans, columns and seperator plates. Today, I brought a lot of it out of the attic and many of my colums had turned yellow. Do you have a video to fix that problem? I learned from you how to whiten the batter. Michaels here in town no longer sells Wilton so I will try Joanns next time we are going to Costco which is a 25 min drive. Thanks for the info.

So sorry to hear about your ex. I'm sure that was difficult for you. 💜 My mom actually had old cake decorations that turned yellow and they weren't in great shape, so I got rid of them. I wonder if the actual plastic turned or if it's dirty? I would assume if it's dirty, it could be cleaned somehow!

Your cakes always look amazing and way beyond my abilities. However, a cake mix hack might be doable for me but I do have a question...should the ingredients be at room temperature or straight from the fridge? Thank you so much for sharing your talent and baking knowledge.

I totally forgot to mention this in the video! Eggs are at room temp. Milk and sour cream are not. I know this goes against common recommendations. But I don't like milk to sit out too long. And the sour cream gets kinda soupy when it gets warm. When it's cold, it's thicker and I just like the result I get from doing it that way.

Yes! I love the taste and they do too. All my decorated cakes are doctored mix recipes. My signature pound cakes are from scratch. (I'm working on a recipe book now, that should be released in a few weeks!)

Hi Karoly, it seems like the cake mix you're using indicates16.25oz and 460 grams, but I believe you mention 15.25 oz. When I got home, I noticed I purchased the 16.25. Should I just measure out 432 grams of the box and 1/3 or 144 grams for a 12 inch cake pan or should I use the whole 460 grams and divide that by 3? Being that I'm not great at making cakes, I thought I'd check first! Thank you!

For some reason, the white mix has a different amount in the box. I didn't realize that until after I made the video! I don't modify the recipe, I do it the same and haven't noticed any difference. That's one of the reasons why I love to use doctored mix recipes. 🙌

How long does it take for your cakes to thaw?

I usually let them thaw for at least 4 -6 hours, depending on the size of the cake.

After 5 min when u flip out of the pan...do you wait until they cool and then wrap and freeze.

Nope! I wrap when they are warm. It really helps to keep the cake moist. 😊

I only get a hard crust when I use Duncan Hines cake mix. By any chance, is that what you are using? If so, try Betty Crocker, I never get a hard crust with BC!

I just got a new oven with convection option delivered the day before thanksgiving. I baked cookies on the convection, and they were dried out.

Yeah, I only cook convection when I bake deep cakes like bundt cakes. For everything else, I feel like it bakes too fast!

Yes I have used this for wedding cakes. And, yes, you can add almond extract to the batter. It's really good!
