In this video I'll show you my experience with reusing lids from salsa jars/jelly jars/spaghetti jars/juice bottles to preserve fresh garden fruits and vegetables. This video is from the fall of 2020 when everyone and their uncle needed canning supplies, specifically lids and when they could not find brand new ones they simply sat and let their harvest go to waste out of stubbornness and loyalty to the ball canning guide. I chose to consult other people and found plenty of evidence online that we could be more recycle friendly than originally told. I also will show you real quick how to water bath can using old Smuckers jars. Then at the end I hope you enjoy a glimpse into our homestead.
Tomato Jam Recipe:
3lbs diced tomatoes
1C sugar
2 (sm) lemons
1T ginger
1t cinnamon
1t cloves
1t cumin
1t salt
1/2C vinegar
Medium heat in saucepan. Bring to light bubble then turn down and keep stirring until it gets to a thicker consistency. Use an immersion blender to break up bigger chunks of tomatoes if they're still sticking around by the end. Water Bath extra jars for 10 minutes or just freeze extra jam if you do not want to water bath jars.

**update** Since posting this video I have pressure canned all sorts of commercial jars/lids with no issues. I have used salsa jars, jelly jars, pasta sauce jars, and olive jars. They've all stood the pressure and have remained sealed....I have tested this over multiple batches of canning different kinds of food. I am 100% comfortable endorsing using reused commercial jars and their lids in the pressure canner for any length of time, even including meat times. Do you tighten down the lug lids tight before processing? Also a real easy way to get your Ball lids off is to take your ring upside down, holding ring with both hands put fatty part of thumb palm on lid for leverage slide ring under lid edge and pop up.

@Laura Beattie I think I understand what you're saying about the ring and you're right! I have fiddled with that and it works most of the time! The lug lids get tightened finger tight before processing and then after processing, once youve removed them from the canner, you tighten them down for a final tighten.

Have you ever canned using large 80 oz pickle jars? It doesn't look like you can submerge them in the bath without a huge pot. Do jars that big need to be completely submerged in water?

There are so many people in the US who are so rigid with the canning rules, it's nice to see common sense! Here in the UK all of our preserving in jars is done with standard "lug" lids. You can buy them new or reuse jars bought from the store. I water bath and pressure can in them and they are great.

Just the answer I was looking for. I wanted to know if anyone had ever pressure canned with the used lug lids. I know they go on finger tight, but when taking them out of the p canner do you tighten the lids all the way????

@@dianelefever3961 lug lids go on tight all the way before going in the canner. They're designed so that they let the air out that way. Finger tight is only for the two part lids.

That is because of The FDA and some other agencies. Ball is actually the one who comes up with the "Safty" guidelines for canning. Think about that for a bit. A company that makes more that half its money off of canning lids.

At the beginning of the plandemic I bought an old box of used salsa jars 24 jars for 2.50 and I made homemade salsa and canned it in the used salsa jars. All perfect been eating since.

Found this out on accident!!! I was making a test batch of pickles, and used an old pickle jar and old lid,... and when I tried them yesterday, found that the lid had properly sealed again.... it opened and popped like I just bought it from the store, FANTASTIC! Thanks for the vid as well!

I reuse lids too. The big size classico jar says "atlas" on the jar. It is actually a mason jar. As long as you only hand unscrew the lids they can be reused. I have done that several times. But if you use a can opener or knife etc then you have damaged it and it won't seal. Other jars with similar type unscrew lids work too. Just use your muscle to open. Also the FDA says don't use glass mayo jars (a lot made of plastic these days) but my mom used them and I use them never had one break, uses standard lid. I just found out that in Europe they don't even pressure can their meat, just hot bath🤔 nobody gets sick. I have a close friend, doesn't own a pressure canner and she cans their venison in hot bath. She swears by it. I think FDA has to justify its existence so comes up with all these rules.

The European methods for WB all foods are found on their jar manufacturers sites, Weck jars being the main one.

@@lat1419 we can waterbath anything as long as it is for at least 3 hours. I see one woman in Azerbeijan waterbaths everthing for 5 hours.

@@nancymweasel6561 hi! Thanks for all the help and advice. I have just water bathed some green beans with tomatoes following a Turkish canner, and afaik on mainland europe they do actually WB everything, even meat pate. The US regulators seem to be very risk averse. They are even saying not to WB passata because it is too thick. I know the microbiology behind botulism (am retired mocrobiologist) but it is infintesimally rare, and the toxin is destroyed by heat, so I guess that only things eaten straight from the jar would be risky, if that. I am just a bit unsure about the lug (one piece) lids, about how tightly they should be fitted for WB or PC. We should be more like Azerbaijan, and just go for it! (If in doubt, leave it in an extra hour. Or five!)

@@lat1419 just can it twice: one day and the next day again, the recommended time and temperature (beans e g are tricky, I freeze them or can them with vinegar as salad). Tomatoes are very easy to can.

I've been rebel-canning, using basic common sense, on my Mexican hacienda for several years now using store-bought Prego sauce jars and I've never had a "blown" lid yet.....good, concise instructions, and even though I'm not religious I enjoyed the ending to your video. Keep up the good work.

Hello, I’m new to the faith, and wanted to share some things I found. I’m pretty sure Noah’s Ark has been found in Turkey-Ron Wyatt “electric resistivity scans”. I have been pretty successful at getting the dozen flats of Ball pint jars from Target. I’m considerate and don’t just take every single flat from the shelf, because that’s not cool. I will take one or two and leave the rest for the next person. There’s prepping and there’s hoarding. The former is wisdom, the latter is just being a d¡ck. If we are conscientious and thoughtful there really is enough to go around.

So encouraging. I a. New to canning. I have so many used jars and canning jars are so pricey. Most sights scare you into thinking you cant reuse these jars and you MUST use canning jars, mainly Ball. My thoughts were, "really....who decided this!?" Money money money making businesses preying on fear is how I have felt about it since learning to can. Thank you young lady and sister in Christ. I've seen those Italian canning videos! They'll crimp an old school bottle top back onto those glass coke bottles...Then pile them into a water bath canner in a heap! I love it! Thanks for your comment.

My grandmother - a very frugal lady! - was re-using spaghetti jar lids back in the 1960's. The sealing material on the cap has since greatly improved. We reuse 'one time' canning lids, too. Heating them in a boiling water bath usually lets the compound rebound to like new condition. Good for you! One point: The rings should be removed for storage. This prevents a 'false' seal in the event the lid pops and then goes back down. My wife was an old fashioned Home Ec teacher, and this was one of her 'hot' buttons. All in all, wonderful vid!

I’ve been canning for 50+ years and it’s only been in the last 10 years that they have come up with these new rules. It pays to be the company that makes the lids and rules too I guess.

In the UK Mason jars are hard to get in large quantities and expensive as well!! I have reused jars to preserve jam and chutney in the past and that stuff was being eaten a couple of years down the line, it was perfect, we all lived! I call it a pop seal lid , and I have been saving all of mine for months now because I think I am going to be needing them to start preserving food in the wake of upcoming hyperinflation and shortages, so thank you so much for this video, it has reinforced my thought that it was something that could be done! Good luck with future harvests and preserving!

I reuse the lids unless there is a flaw in the rubber ring, creating a gap. No problems. Been saving all my glass jars that have the rubber ringed lids. They work great.

Hi from the U.K. 🇬🇧 we don’t do a lot of canning in the U.K. but I have been canning with Kilner jars like your Ball jars for a while now. I didn’t have any seals one day so I took a chance on using a jar and lid from a spaghetti sauce i used it in my pressure cooker, I was a bit unsure at first but after taking them out of the pressure cooker (canner) the button on the top popped down and the lid has completely sealed in fact most times the seal is so strong it’s hard to undo when you want to use them. Don’t worry about using them in your canners the glass is very tough as they use a similar method to canning in the food factory.

🇬🇧 uk also. I use my shop jars as well. My favourites are Hellman’s mayonnaise as they are large. Even taco sauce jars for small servings of something.

Hi Julie 👋 I’m also in the uk and would love to start canning but I can’t afford a pressure canner; I know it sounds silly but can a pressure cooker get to a high enough temperature? I always see it said that canning has to be in a proper pressure canner to be safe x

@@foreverhopeful1 hi I used n older model pressure king with a canning setting (not on newer models) it holds 4 kilner jars 500mls , you have to position them carefully as the lid thingy gets in the way. My jars are still sealed and I still have some of the originals from the start of plandemic. Good luck.

I live in Mexico and have limited Ball jars and lids. I was looking at the spaghetti sauce jars and thought they would work for canning. So tried it with with plum jam. Sealed perfectly. Thanks for the confirmation.

I tried it with some left over applesauce we were canning and the lid resealed. it was a jar from pickled beets. Luckilly have not had any problem finding lids. Was also blessed with several hundred used jars that a friend gave us! She has more, I just have to get them and clean them. Mom and I have not canned since my Nana passed away in 1995.

Use the back side of butter knife to open the lids. Works really fast and never damages the lids or jars. Great video.

Ain't no shame in that! They get super hot during the processing, I too agree that boiling the lids is probably being extra cautious and could be skipped.

I processed 2 mini jars that were from Better than Boullion and I had one lid with a button and 1 without. But they both sealed nicely! Onion jam in one and Red Pepper Sauce in another. Thanks for the go ahead!

Onion jam sounds like something I need in my life. Can I ask how you tested the seal on the jar that doesn't have a button? Also I forgot to mention...you can order replacement lug lids for all sizes of jars online. I've heard from Uline but I'm sure other places as well.

So now i feel confident to get canning some staples. Hopefully saving freezer space and produce going to waste. In the uk the so called proper canning jars are too expensive for me, but i have a good supply of used every day jars and lids.

Hi. Interesting video. I have been canning for 50+ years and when I first started I canned by the open kettle method for all my jellies pickles etc. I used store bought jelly jars and pickle jars with their lids and really any likely jar I could find. I did boil the lids a little longer because the hard sealant needed to be softened more than regular lids I thought. Never had problems with the jars not sealing. I always use water bathing now for jams and jellies and two piece lids or Weck jars and Tattler lids since i have run out of the commercial jelly and pickle jars. They are the ones I like to give away instead of mason jars. One thing that we need to be careful about is bumping the jars together or stacking them cause the seals can pop open when tapped at the side of the lids I don’t remember pressure canning using these types of lids though. Oh I meant to say I have a cat that would almost make a twin to the cat in the video. I call her Goldie. She adopted me and my husband one day out of the blue.

Hi Sharon's Place! I am hoping to practice the open kettle way one of these days. I agree, the commercial jars are so much better to give as gifts. Great tip about stacking and bumping, I agree. Cats are sweet little confusing creatures that adopt and move on in their own timing, never can figure them out, but every so often you get a special gift.

Once upon a time mayonnaise came in glass jars with metal lids. My Mother saved all of them and canned in them regularly. She also used to send the boys out o the garage with a ball peen hammer to "fix" the flats. All 11 of us survived eating canned food in reused jars/lids.

I’m so with you on this. I just do my water bath stuff like pickles, jelly, relish, tomatoes in these type of jars. I just think it’s frugal and smart. Nothing unsafe about this.

how long do you process the jams? Is there any jam that cannot be water bath processed?

Generally whatever recipe you're following to make the jams will give you the water bath time. And as far as I know...all jams and jellies can be water bathed.

@@thissideofthefirmament Oh, hey, that's what I'm thinking. I read somewhere not to waterbath can jams. . . .????? Have you ever had any jars break? That's the other "big concern" I read about. . . .but I have saved every glass jar and cleaned the stickers off (some come easy, others need Goo Be Gone) and am eager to use them since they are smaller sizes. I make quite a few sauces that are for adding to things and they don't come in large quantities, like carmelized onions AND roasted bell peppers, etc. . . . . I desperately want to use these jars. All have the strip of silicone around the inside rim, and except for a few, they all have a button on top. The ones without a button. . . . I think I'll still give them a try?

I've never had one break in the water bather, no. And as far as the lids you have that don't have the button...I haven't tried that but you could try it and then just use those ones first. I'm sure there's a way!

I'm so happy you found my video! I continue to reuse lids, sometimes up to four times now, with only a small pile of rejects all these years later. I'll need to make an updated video on the commercial lids that work the best. I have only one kind of commercial jar/lid set that fails everytime on me, but I just put those in the fridge and use them shortly thereafter. Anyway, thank you for your comments and God bless you! I’ve always thought that if the big companies use one piece lid for canning, we Can too! But some people are so afraid of doing so. I’ve always used the one piece ones living in Mexico, when I moved to the states I tried to find the one piece lids unsuccessful 😂. I know Italians also use one lid canning

First, I want to say that I am quite impressed with you presentation skills. This is my first time viewing on of your videos and I am so happy to see someone with such good presentation skills. I also love that you have done extensive experimentation for the opinions you offer. I commercially package foods on a small scale. The closures used in my products are all singe piece lids, made from a variety of materials. ANYTHING that gets a proper seal is....properly sealed. That is really the only thing of interest when we are talking only about the ability to hold a vacuum. Many things are complete No No in home canning are routinely used in commercial canning. For instance, I steam treat and seal bottles with PLASTIC lids. Most people would completely faint at the idea. It is done routinely in commercial food packaging. Again, thank you for your wonderful video. I have liked and subscribed to your channel and I look forward to future videos from you. Thank you.

Thank you for this sweet comment. I have been thinking about uploading whole records of the old gospel music I put in my videos. Then people could play them in their homes and get the warmth I glean from them. Would that be something youre interested in? I get so sick of the sound of the radio nowadays.

You can also use an old fashioned bottle opener used for pop bottles back in the ‘50’s and ‘60’s to open jars.

I just reused some of my lids to can up some Bone Broth. It worked and worked well. When I remove my lids from the jars after the first use, I am very careful with them, and try not to bend the ends up. If I do happen to bend the ends, I do not reuse them for canning. I may reuse them for storing herbs etc in jars, but I don't use them if they are bent. I also only use good canning jars to can things in my pressure canner as I am always afraid the thinner jars, like the jars of Honey we buy, will shatter in a pressure canner. I use those jars to can Water. I can jars of water when I don't have a full canner and want to make sure the jars don't walk around. I just fill the jars with good clean water, put on a used lid, and ring, and put it in the canner and can for whatever time my food takes to can. Then I have some clean water stored and the jars in my canner didn't walk around and maybe hit each other and cause one to break.

I save my pickle jars, jalapeno jars, spaghetti sauce jars and can in those with their original lid and all worked great.

I save all my classico pastas sauce jars,before I only used them when there wasn't enough to to fill the jar and I put it in the fridge.I often wonder if you could use them for canning,I found out last year that you can.

If it seals then it's good. If it doesn't seal then put it in the fridge and use it up quickly.

Hello. I am watching more videos on this subject. Corky country corner shows about the threds on jars. I verified the concept with my honey jars that we use as drinking glasses. I did not think they could be used for canning. According to what was explained I was correct with all the jars on my counter I had selected for canning. All with pop up lids. :) Thank you so much! As long as it has the seal stuff within the lid, it's usually pink or white, you can try them! If they're just lids without any of the rubbery stuff on the inside then they won't work. Sometimes dollar store stuff has lids on jars but they're just there for decoration or for storing buttons/whatever else, but not necessarily food. I would say, if you can find any at your grocery stores, to just buy a case of canning jars, they work out to be a little less than a dollar each where I'm from. And the glass on the jars will be better glass than glass at the dollar store. I wouldn't have thought about glass quality except earlier this year I had a carafe explode on me while I poured hot water into it. 😲😞

@@thissideofthefirmament yup i bought a pack of 3 that said canning jars and when i checked they had the rubber seal. Ill be super on top of warming the jars with hot water and starting off with room temp water so they dont explode. I watched a video where a lady put half a cup of sugar and then just hot tap water to make a syrup for each jar. Swirling until it became a syrup dumping in some peaches then adding that to the pot. I think my glass quality will be okay. If things work out well and ive gained more success thats not theoretical ill look into buying the proper supplies. Thx

Gurl start putting that stuff on everything! Make some potatoes or add it to a rice bowl. Eggs, toast, it's a perfect condiment for sweet or savory.

It is ironic that you're not supposed to ever reuse commercial jars, and I'm pressure canning with glass mayo jars from the 70's/80's that my mother passed down to me. Still going strong.
