Pizza sandwich

250g pkt Coles Kitchen Pizza Dough Ball
2 tsp olive oil
12 Coles Pepperoni slices
1 tbs chilli honey (optional)
1 tbs basil pesto
125g fresh mozzarella, drained, sliced
1/2 tomato, sliced
1. Preheat oven to 240°C. Grease and line a baking tray with baking paper.
2. Divide dough into two equal portions and roll each portion into a ball. Lightly coat in olive oil and set aside to rest following packet directions. Transfer to a lightly floured work surface and roll each dough portion to a 20cm disc. Drizzle each disc with ½ tsp extra oil and fold in half. Place dough portions on the prepared tray, stretching out each dough portion slightly. Drizzle with the remaining extra oil. Bake for 10 mins or until golden.
3. Meanwhile, cook the pepperoni in a medium non-stick frying pan over high heat for 2 mins each side or until browned. Drizzle with the chilli honey, if using, and turn to coat.
4. Carefully open each dough pocket. Spread with pesto and top with the pepperoni mixture, mozzarella and tomato. Fold over dough to enclose filling and serve immediately.
