As a certified Master Preserver for over 10 years now, I applaud your stance! Your reasons are sensible, but let me provide you with a few more factual reasons. I can't even consider the "longevity" argument because I know that the Presto Electric Pressure Canner has FAILED all independent third party testing so far (as have any other electric pressure canners, or instapots). Presto use to have a USDA approved "seal" printed on the box, but it was something the Presto design folks placed on the box, as stated "USDA and NCHFP do not test or give approval for any equipment" they give guidelines. Presto is interpeting their own rin-house easearch against the guidelines and they, themselves, state that their electric pressure canner meets the guidelines. But again, it hasn't passed thrid party independent testing. So we don't even know if it is safe and accurate right out of the box, let alone how it will hold up over time. You're completely right, it's not worth playing Russian Roulette with your family's health. It's so refreshing to see someone on RU-vid take a stance against this product rather than just gleefully going on their way using this and other "multi-cooker devices" (electric pressure COOKERS)...claiming that they're safe because the company says so on the box or that they've added a "canning" button to their touchpad and then they go on and on touting how "easy" it all is. By the way, I'm not anti-Presto...I have 2 standard Presto Pressure canners (besides an All American) and I love them and they are well used and have held up for years and years!

Thanks for that info! Is there documentation anywhere about the failed 3rd party tests? That's the biggest argument about all of this - the trusted 3rd party tests, but I've never found any documentation that they were tested at all that way.

@@ThePurposefulPantry They have been tested before and I think they are now testing again for the third time. I don't have the documentation source at my fingertips, but I'll see if I can find it in my current "eclectronic mess"...I just switched over to a new computer and supposidly all the files were transferred, but things are jumbled and not organized like they were...another example of "dependable technology"????

Thanks Leisa for being honest. I have canned for close to 50 years, am old and do smaller batches. However, I will never, never, never use an electric canner. I love the entire process of preparing the food, jarring the food and placing it in my All American canner. While things are processing I use the time to sit near the kitchen to pay bills, watch videos, write letters, etc. Not a moment wasted and love to hear the jiggle. Here’s to old school!!!!

Me too. I never did trust those. I think you need to put effort into whatever you do and sometimes that makes for more work. But it’s safety I choose above else and sometimes the old ways are the best ways. I’m not knocking anyone who likes them, go for it! But Leisa said it best. I agree 100% with her. I’ll take the time and effort with my canners. I do what you do…pay bills, watch videos etc.

My Mom taught me to water bath can many years ago but she never had a chance to use a pressure canner. I was nervous about getting into pressure canning until I watched all of the Canuary playlist. Now I am ready to take on the pressure canner and create the pantry I have always wanted/needed. Thank you!

read read read the instructions then get a paper and write a simple step by step check list and post where you are canning as a quick reference as you go along to reassure yourself you are doing it correctly!

I just started pressure canning last year but hit it hard with canuary! I use the home center for food preservation did basic rules and hall for different recipes. I keep them pulled up on my phone and double check several times! If you don’t have a juggler, get one. So much better than the gauge!

Another channel did excellent video comparing and testing the different electric canners. She even had a thermometer she could put into the jars that gave readings every couple minutes to tell how long the food was in the kill zone to know if it was then safely canned. Only one passed all her tests. It was NOT the Presto.....

I have 3 of that other brand and love them. I have a giant All American I've never used because I haven't been able to get the gauge tested and because I have a really stupid "smart" glass cooktop that can't/won't even hold a boil for water bath canning.

Rose, she seem very smart but her electric canner I will never try even she uses it. Nope. She also changes recipes, but lately is going by the book in her up to date videos. Be careful if they say no to electric canners then its a no till otherwise.

@@jeanniemacadams7983 I realize that this is an older comment, but if you want to use your All-American, they have a weighted pressure regulator that you can get for about $25 on Amazon. That way you wouldn't need to worry about getting the dial gauge tested. (You might still have issues with using the heavy AA on your glass cooktop though.) If you want to can things that call for water bath canning, you might really want to consider a steam canner. They're super simple, approved for water bath canning recipes (under 40 minutes of processing) and are MUCH lighter to work with than a big ol' water bath canning pot. If you really want to do water bath canning with a big pot of water, Ball has a really good electric water bath canner. It's not as controversial as the electric pressure canners, basically the electric water bath canner is a huge pot with a hotplate built in. All it has to do is keep water boiling (nothing tricky about that). I used one all the time when I first started canning because I had a glass top stove. The awesome thing about the Ball canner is that it has a drain spout, so you can set it up near the sink, fill it (from the sink) water bath your jars, then drain the water directly into the sink. Super easy! You can also use it for making huge batches of stock, soup, etc. I actually ended up selling mine when we moved and the lady that bought it uses it for steaming tamales to sell from a food truck. So definitely multi purpose lol.

I have that one as well and love it. RoseRedHomestead did a video on hers and how she was able to scientifically test it to make sure it does what it's supposed to. She's all about the science and facts and data. I appreciate the opinions from both channels.

I had trouble keeping my canner with the gauge on it at the right pressure. THEN you showed the JIGGJER and I have had no trouble with it since. Thank you. I love the JIGGLER.

I'll start by saying I only use a digital pressure canner, but 100% hear you! It is useless with no power. I do need to get a stove top canner and get comfortable with it in case of a grid down situation. I think the one plus to to my digital canner was it taught me the canning process and it wasn't "scary". Now I'm ready to learn to really can! 😉

A cute story. When my dad was a kid, my grandma set him on a stool in front of the stove to watch the gauge. He said he had a book and would look up every so often and that he was a back up for the back up… meaning the sound of the weight releasing steam was the first indicator, then the gauge and then him. And it was because they couldn’t waste money on a failed batch.

I have both a Presto and an All American, I have no complaints other than I need to babysit them when using them. I was considering getting an electric canner as there are more brands coming out so I figured they were safe. I am glad that you made this video because I never considered that they would have safety issues.....foolish on my part. Thank you.

I have and regularly use both a 16 and 23 quart Presto canner but I have to say that my Instant Pot Max does a great job for small batch canning. It's just my wife and I and having the convenience of easily canning some left over soup or beans or half of a large roast she bought on sale is a godsend.

I understand the concerns, but my digital Presto electric canner has not only gotten me into the world of canning and preserving, but it won't be a "door stop" if the grid goes down because I have a solar generator. As "Lead" tells us, "Practice your preps!" I can run a batch in 2 hours and the BLUETTI AC2000 can handle it. When prepping your back-ups need back-ups. Thanks for listening 🎶

We will be fine. An outdoor fire, and a pot that can withstand the fire, and can away. Some countries still do it this way. They don't use electric or non-electric pressure canners of any kind.

Leisa, thank you for asking the question and getting some sort of answer from Presto. I agree with you that there has not been enough testing done on this product. I’ll be sticking with my stove top. And it’s so expensive. My Presto canner was almost $150 cheaper than this model. Love your channel and information.

I have an electric canner and I feel like it's a training wheels approach to pressure canning. Not so much a long term installation but a stepping stone to being more comfortable with pressure canning. I've pulled dozens of jars through it without issue but this is not my final solution. I too have an electric canner. I rent and have a glass top stove (that I absolutely hate) so stove top canner and cast iron pans are out currently so my mother in law bought the presto digital for my birthday/ Christmas gifts. One day I will have my own place with a real stove and be able to get doing regular pressure canner but it's not right now. I just check through my jars frequently to ensure seals are good. I respect her opinion but I think putting trust in presto to make sure their products work as opposed to the other companies I heard of making digital canner is also valid. Presto has been making canners a long time and they know the standards needed. 🤷‍♀️

I respect your stance. If I had money to throw around I'd buy an All American and a decent stove. I bought my Instant Pot Max ($130) after I tried to use my big canner in my apartment. It is not a set it and it is not a set and forget it but it's perfect for my situation for now.

I agree 💯, I’ve been canning for 45 years and I won’t use one for that reason. I also prefer my weighted gauge Presto because I know it’s going to be accurate. I never need to have a dial checked and that gives me peace of mind.

Even with the simple electronics of dehydrators (Presto included), the temperature variation is huge on some machines, and you don't know it unless you tested the temp. If the electronics in a pressure canner can't be accurate to know for sure there's been a loss of pressure, I simply can't trust it. As much as I want them to be great, I can't. Thanks for the extra leg work on this!!!

Thank you Leisa! I purchased the Nessco electric pressure canner last year. I have an old glass-top stove. I water bath canned on it a few times but it struggles to heat that much water and I don't have confidence that it would hold the right temp for pressure canning. I do plan on purchasing a propane stove and a "real" canner someday soon. But for now, I am loving my Nescco and learning to can all the things.

I have the Nesco electric prepare canner, have been using it for years, it works beautifully for pressure canning. Never had an issue and I eat my canned food all the time. Also, I live above 1000 feet. Just my experience.

I believe in new technology. New technology got us to the moon and many places we had never been before. I would not get food preserved if I did not have this Presto. I have a regular canner for a backup. I am involved with the process of canning and do not leave the room. Love the presto electric canner. Worth every cent.

My electric pressure canner has a weighted regulator just like a normal pressure canner. It’s using electricity to heat the water just like my electric stove does. I honestly don’t see any difference 🤷‍♀️ I currently have a glass top stove so your All American canner is already useless to me.

@Angie Vargas Check out used canners at yard or estate sales & goodwill type places. I found a 16 quart All American canner for $50.00 & a nearly brand new 16 quart Presto for $20.00 at yard sales! I'll be buying a new guage for the AA & new seals for the Presto, but that's still far cheaper than buying new.

I've only been canning for about 2.5 years. It's work. After I've done the cleaning, chopping/trimming, checking my jars, etc., the last thing I want to see is an "error" sign flashing at me from an electric canner! I'm using a regular one. I sit next to it on my computer and watch youtube. I plan out my canning days just like I plan out laundry, ironing, cleaning, or anything else, and the whole day is dedicated to that one thing. Instant gratification is, often, for the birds in the long run. Thank you, Leisa, for your honest input! LIke you, and for many of same reasons, I'm sticking with the tried and true.

Why do people buy bread machines? Same reason, convenience and maybe they like gadgets. I got mine (Carey) for $125 and have used it several times. So far so good. It doesn’t heat up the kitchen. I also have my old school Presto for bigger batches.

I have a bread machine because I had to go 2 years without a cookstove. I cooked food in a crockpot,electric skillet instant pot and microwave.

Agreed. I have the Necso that Carey sold his patent to and I love it. I still use my manual canner for bigger batches and IF the power goes out, And for now I do label which jars were processed by which canner. Naysayers were flabbergasted when Harley Davidson added motors to bicycles. Technological advances will continue to be made and two wheel bike lanes will continue to be ridden. To each their own.🥰

I started with Insta Pot Max, do like it, but only does 4 pints at a time. Was a good start for me, but now using 16 qt Presto canner (not electric), not to heavy, it can do quarts, more pints and have used off grid with this, for practice. Thanks for your input and guidance in canning and prepping. I had the same concern, nothing is made to last, have extra parts for presto.

I have used the insta Pot Max also. I have used it for two years without issue. I have set the numbers higher than required for more safety. I personally am going to continue to use it. Time really is an issue.

I’m with you on this! I’m old school & literally sit on a lawn chair a few feet away from the stove. I’m constantly having to adjust the temperature on the burner, up or down the whole time it’s running.

Are you using a weighted regulator (aka jiggler)? That takes a lot of the fiddling with the burner out of the process. It makes it a lot simpler to keep the correct pressure. Small adjustments on the burner until you get just the right speed of jiggling.

I have the small Presto canner and it works well for me. It can be used both for pressure canning and water bath canning, as long as you remove the pressure valve (release valve?- the thing that pokes up when it reaches pressure) and don't add the jiggler. I have a gas stove, so can adjust the temperature as the canning progresses to keep it running properly. I live alone, and have done small batches. (Lately I've been adding occasional jars of water to have that on hand in case of emergency too.) I think the only thing I can't do in it is water bath quart jars, but I usually use half pints and pints for everything. The only time I use quart jars and pint and a half jars is when I can onion broth, which is a pressure canned item.

It was watching all of the Canuary videos that helped me feel more confident in my electric Presto. All the steps are there, the canner just helps guide me through the process. It's not set and forget. It's not multi-purpose. A regulator needs to be put in place after venting, just like a traditional canner. I have a brand new electric range that I really love. A dual fuel range runs $2K. (I looked because the canner is limited to 7 pints or 5 quarts and I just spent all of yesterday canning 15 pints of beef bone broth.) If the grid goes down, I'm cooking on my grill anyway. Presto would be wise to send you one to try.

I agree, you make valid points. I too have a Presto Precise Digital Electric Pressure Canner and I love it. It's not a set and forget, nor am I a lazy canner who wants easy. Everyone's kitchen setup is different, expensive new stoves, etc. Also, I use my canner often! I've been so pleased with the stocks, meats, vegetables, jellies, pie fillings,etc !

Spot on. My husband brought me a pressure cooker that doubled as a pressure canner. A few years later, the cord melted into the body. I only used it twice for pressure canner. I use my real canner for canning.

Leisa, I agree 💯 with your thought process on these electric pressure canners. I love the whole idea of traditional pressure canning and I’m not interested in the “set it and forget it” aspect. The experience of canning my own food and going thru the process is what’s so rewarding. But hey, your kitchen or rules. I prefer the safe method.

I really appreciate this video. I have an electric pressure canner and an All American. I haven't been able to use the All American due to the stove that was with the house when we bought it. Last night my gas range was delivered!!!! However I've been able to increase my pantry with the electric canner..... but now I'm going Old School!

Ask me how many fancy electric coffee pots I bought that failed when I needed them in the morning? I went with one that just had an on/off switch and got up a little earlier to make sure it worked! Still nothing like a pour over coffee filter. Works every time.

I have a presto digital canner and enjoy it. I've eaten foods that I've canned in it and I'm still alive. Red rose homestead put a thermometer in one and the reading for the temperature was where it should be.

I have the presto electric canner. You make valid points. I do know that it has lots of safety measures in place, but yes, there is no way to calibrate or correct any of it if it goes wonky after time. It holds 5 quarts and 6 or 8 pints. I think if someone wanted an electric one because they were scared and they have the money to then also buy a old school trusted one also, I would say it's a good idea. Once you've gone through the motions with the non-scary electric one many times, it should be a cinch to graduate to the tried and true.

I agree with everything you said Leisa. My first concern with the digital canners was that they did not appear to make different models based on altitude. I don't care how "smart" an electronic pressure canner is, I don't think it knows when I am canning at my regular home altitude of -1000 feet, or at my mountain property which is +1000 feet. With my adjustable weights on my manual pressure canner, I can control for that and know it is correct. Where I live, the power outages are so frequent and can range from a few minutes to weeks in duration. I want a pressure canner I can rely on no matter what the grid is doing.

That is exactly why I have not purchased an electric one. We are less than 700 ft elevation and understand that their setting is for higher elevations.

I absolutely love love love my all American canner and my 2 Mirro canners. My Mirros are old, from 1960's, and only have jigglers. We have many items that are old and in excellent working condition, including myself. In power outages all these new gadgets won't work, like you said....door stoppers to prop a door open. Just because things don't have bells and whistles doesn't mean they won't get the job done. My propane stove is from late 1930's and works like it's brand new. I've been using this stove for 23 years and counting, no electronic start, I use a match. Even current gas stoves, with all the electronics, only the burners will work in a power outage, use a match to light burner, the oven won't work. My sewing machine is an 1874 singer treadle, it is truly indestructible.

Thanks for doing all the legwork with your research! The lower-tech options for canning do seem to have the most reliable, consistent outcomes. We've all had digital thermostats and thermometers fail to be accurate, but this is something where that is not acceptable.

I love my Presto electric. It has given me the courage to finally start pressure canning. I'm 68 and single, so I only do small amounts at a time, anyway. I'm really enjoying it. =)

I set up my Presto 23 qt pressure canner on a propane burner in my utility room, in straight line-of-sight from my kitchen so I can watch it while I work there and 10’ from my office desk to be able to work there as well. With the dancing jiggler, I can walk down the hallway to the bathroom & still hear it. I’m happy with it as is!

I am so glad you are talking about this, there is a RU-vid channel that her background is science teacher. She uses a electric pressure canning cooker. She tested it by placing a temp reader inside and turned it on. She then seen it reached the temp required. And uses it all the time. I like what you said, pressure comes up but does it hold is another question and may last you 2-3 years. A canner can last many years. Just read the instructions on what heat source you plan to use then buy the canner that is best. So much info on pressure canning for food safety. Little things like moving the canner from the heat source to bring down the temp. is a no no also tilting the jars when taking it out because of water on the lids etc... Canning is not for everyone and only preserve what you eat. I Freeze food, I have pickled, I've not done canning yet or Fermentation. There is just three of us in my household. But I'm learning all I can on canning so if I need to I will try it as food prices keep rising where I live.

I have been on the fence about Electric canners, The reason is I have a glass top stove, You make a lot of great reasons not to now. You make sense. Thank you for looking into this for us. I've been going back and forth on whether I want to get one or not. The price tag is a HUGE obstacle, followed closely by the uncertainty of how well they will hold up. I will be sticking with my Presto pressure canner with the weighted gauge! Hi Leisa, If they have been making/selling them for 2 years that's fine, but I think the question should also be asked , how long was it tested before release for sale? It could well be that it has been tested for several years before they started to sell perhaps? I think you can't go by how long it's been for sale on that one. I do agree that there should be a way to manually test the product, especially as everyone lives at different altitudes, good informative video though , thank you.

Everyone has an opinion and I respect you for yours. Personally I will continue to use my electric canner as the research I have personally done forms my opinion that the one that I have purchased (for much much less than you quote for the one you researched) is very safe and accurate to use. I feel that it is an individual decision and one should research for themselves and not rely on anyone else, be it a you tuber or otherwise, and make their own personal decision of what is right for them. PS: Right now my Walmart has the 16 qt Presto for $79, and I'm in AK; may be slightly cheaper on the lower 48. Even if you have to buy a separate burner, it's still cheaper than the electric units.

I agree with you 100% Even the Ball electric water bath canner isn't accurate. If you adjust the know below the highest setting it can all of a sudden stop boiling. It happened to me and I had to start the timing again. When I called Ball they said that if the canner breaks they can't be repaired. So, if anyone has the waterbath canner do not walk away because you don't know if the boiling stops on it's own. Also, electric current can also vary. Thanks for all you do. You are the bomb. And if it were up to me I would award you a Master Food Safety Advisor!!!!!!!

I also agree with you. I just started canning 2 years ago and taught myself by watching several safe canners on you-tube including you. I now have 2 presto canners and a water bath canner. As the electric canners are digital I would never feel safe using it. Also the energy used to can does not make it cost efficient if you only have 4 jars. I always run a full canner load even if it means I am adding a jar of water to put on my shelf for emergencies.

I just watched someone do Costco meatballs (with flour in the top 3 ingredients) in an electric pressure canner. They did give their reasoning for why they trusted it, but it made me very uncomfortable. My children eat my preserved food, so I have to be very careful. (I’ll risk a few things myself but NEVER with my children). I just canned meat and black beans and got distracted while washing a few dishes and my jiggler stopped for about 45 seconds maybe a bit longer. I was 45 minutes in! But I started over, ima have some over processed foods, but not botulism lol.

I love my Carey canner-I can pressure cook a big family chicken dinner in it. I use it for all my instapot style dinners. I caught it on sale and it was cheaper than an instapot, and I can use it like a slow cooker. But I’ve got a 42 year old AA for preserving.

Occasionally while cleaning out the freezer, I would love to do 5 pints at a time, especially of meats. But with a little thought and planning I can figure out a way to turn 5 pints of meat into 7 quarts of soup, and put the lot into my All American Canner.

@@VagabondAnne If I don't have a canner full, I can emergency water. I've canned water, here a little, and there a little until I have a comfortable supply. If it ever happens that I need the jars that are full of water I can just use it to water my plants. I use Tattler lids so no (additional) cost for lids.

Leisa I too have arthritis and am 80 in November so i do understand but I improvise. I put my canner on the stove empty. Fill jars to put water in canner on stove so it's not heavy. I use my wrist and hand braces on all canning days. I like my canner. I will not trade it for electric. I trust mine

One day I'll have a need to process small batches of something but for now I run 2 canners at a time- one I can stack and one I cant- just to process half of whats needed at any given time. I haven't ever considered these because it'd be a waste of my time and money but I have seen many use them. I've had my reservations of them as well and I'm glad you addressed this topic again. Maybe in years to come as I have less mouths to feed I might consider this (and by then they would have perfected it more) but I doubt it. It took me years to hop on the instant pot train lol and I still hardly use it.

Eventually, there will probably be one that will be tested by a third, independent party. Until then, why risk it? We have tried, true and reliable canners that we've known and safely used for years. Thank you for your voice of reason. And by the way. I've had things burn in the IP without ever getting an error.

I got an instant pot cooker. Chunked it. I'll take my old fashioned pressure cooker any old day. I bought a presto pressure canner. Love it. I just today bought a jiggler. I want to be safe and if waiting for the appliance people to test their stuff awhile is necessary then I will wait. Not judging anyone for using an electric canner . Your risk is your risk. But for me, it's not worth the risk to me. I know someone who use to do rebel canning. I promise you they never did it again after they had a terrible experience doing it. Not my call for anyone elses choices and Leisa is just trying to inform you and not judge you.

Thank you for your opinion on this. They certainly are tempting and I've considered the purchase. Of course the price was prohibitive and I never made the purchase. Now hearing another view point I feel so much better about not making the purchase. Perhaps in the future those concerns will be addressed.

Great information - I learned to can from you, I love the Hula dance and micro managing it. Maybe not today , May down the road we might learn to trust the "error/burn code" - I don't trust my oven to accurately display the temp, I keep a oven thermometer in their. I have Learned to keep my oven at 350 I have to set it to 375. Can we also talk about "How many appliances does one kitchen need?"🥂

Indeed, there is such a thing as too many gadgets.I wavered for years about getting a Cuisinart food processor because the kitchenaid mixer attachments are amazing and affordable. Finally I got one on a crazy sale, and even now I am forever on the verge of throwing it out. I hate cleaning it. I suppose a lot of these decisions are simply personal. Some people have money to burn. I love my Instant Pot, and it has saved me countless hours and dollars, but it would not surprise me one jot if it died suddenly. Electronic stuff does that (my KitchenAid stove has an electronic panel that is constantly on the fritz, and the oven is therefor completely unreliable - ugh).

Agree 100%. My oldest and still functioning Presto 21qt was purchased in 1972. Today, I have 4 Presto canners. The newest are a 16 qt and a 23 qt. Have no intention of purchasing an electric canner from anyone. As I type I wonder how many electronic devices I've discarded since the mid 1990's. Computers that became obsolete. Computers that crashed. Other gadgets that failed after a few months to a few years. BTW, *I also enjoy having the option of choosing* whether small batch or big batch processing best suits any situation that comes up. For example, a local hunter gave the a deer this past fall. His family had already stored all the venison they needed. It was easy to pull out the 23qt canner and set it up for as many pints as I could get from that deer. Just as easy to pull out the 16 qt and do some small batch for something on sale that we don't eat very often.
