I’ve lived the majority of me life 15 minutes from the WestCentral Sierras. Outside of your geography you are 💯% correct. When you add on the frequency of droughts it compounds the issue. The BBQ Jerk It will never ever season like that. It needs air flow to dry. The stuff at the bottom is probably green as grass and rotting away. Piss poor way to do it. Personally I would wrap and palletize it. Easy to handle, and good airflow. More efficient use of space too because the wrapped stacks can be stacked 2 high. This operation has to get into the new Millennium. Compare this to some of the high volume European operations. You will see what I mean. Mind you, at his age he probably just doesn't care or can't be bothered to increase efficiency and quality.
