Today's recipe is for egg cookies that are kind of like a nostalgic egg bolo.
The key to the flavor is more honey. The honey gives the cookies a moist and soft texture.
Another key is to add potato starch. Most cookie recipes call for ground almonds, but in this case, the addition of potato starch gives the cookies a soft and fluffy texture.
▷Ingredients (for 11 cookies)
1 whole egg
30 g granulated sugar
Pinch of salt
20 g honey
18 g vegetable oil
90 g rice flour
30 g potato starch
3g baking powder
▷How to make
1. Preheat oven to 180℃.
2. Add the granulated sugar, honey, and salt to the whole egg mixture and mix until the sugar is no longer coarse.
3. Add the oil and mix.
4. Sift in the rice flour, potato starch, and baking powder and mix until smooth.
5. Put the dough into the bag using the round tip of the bag (the tip is 1mm in diameter). (We used a 1.2 cm dia. round tip, but you can use any round tip. 1 cm or larger is recommended, as it will be difficult to squeeze out the dough if it is too small.)
6. Place the dough on a cookie sheet and squeeze out 11 to 12 pieces of dough.
Bake in a preheated oven at 180℃ for 8 to 12 minutes.
