Made with egg whites or whole eggs, these bitty bites take less than 30 minutes to make, and you can top them with whatever you like. Tomatoes and basil on Monday? Bacon and cheese on Tuesday? Mushrooms and chives on Wednesday? Devote a little bit of time on Sunday to prepping these breakfast champs, and you’ll have a full week of feeling like you got up on the right side of the bed-even if you didn’t.

If anyone finds themselves making these often (like we did), it's worth investing in a set of rust proof stainless steel canning lids. They hold up better over time than the stock lids that typically come with the jars, and are dishwasher safe for easy clean up.

I pop mine out of the little jars and serve them unmolded. Spraying jars first with Pam spray helps ease them out. Delish!

Same! Running a flexible, thin knife around the edge before inverting them also helps produce a clean release.

Yeah , NOICE , i LOIKE that I would take it a step further And coat the inside of the jars with an infused oil to establish a prominent node in the flavor profile And condiments inside the egg during The cooking I’m thinking chives pecorino and prosciutto Definitely need some shattered crispy salmon skin on top of final product for winning a contrast

From a culinary perspective, why separate the yolks if you're going to add all that cream? Is there a texture/flavor (or even health) advantage to using cream instead of the yolks?

When I have guests over, I do the sweet version of this for dessert, which is essentially flan or caramel custard. Sous vide makes it super easy to prepare ahead of time.

I never got around to starbucks to try these but I really thought they were sous vide whole eggs with stuff on top to show off how the cooking method yields such interesting textures in the white and yolk. This is just a savory custard with toppings.

At Starbucks they have an egg white and whole egg version. Personally preferred the whole egg and I do like egg whites otherwise.

I sautee my veggies---onion, pepper, broccoli, whatever---spoon a little in each, then some feta or other cheese, then top off with the egg mixture. One thing we've found is that those two piece lids tend to rust.

The original recipe included the yolks and is delicious. The whites only version is a recent revision.

This reminds me of the crème brulée that you guys did in similar jars. That was super tasty! Although I did break a few containers trying to torch the sugar when they were cold. Not sure how to fix that.

Get the containers out of the fridge about 30minutes before torching them.. the heatdifference you are creating when torching them right out of the fridge kills the container

I have the Anovo and Andrew James sous vide machines in the UK, both have their pros and cons.. Anovo is like the Joule, a wand sous vide that you need to add your own container to and try to make a lid for it (cling film/plastic wrap works for single use) and you can use different sized containers. The Andrew James is it's own container that can sous vide, so you're limited to it's size, but it does heat up quicker and seemed better at maintaining a set temp (tested both systems with a meat thermometer).

dude, any savory custard recipe will work, I have a joule, but before I did, I'd make similar dishes in the oven low temp in a Bain Marie situation, or even stovetop with almost boiling H2O. Works fine either way.
