The beauty of pasta, it's made of flour, eggs, salt and olive oil, you can also make it without eggs. it can be made in so many different shapes and in many different recipes and they're always delicious.
I made Christine's (Dad's) Pastitsio last year for Christmas Eve, and I'm doing it again this year --- I'm making it a tradition. It's one of those meals that's so comforting and special, well worth the time and effort.
Was surprised by the results … but hey, pastitsio truely is a delicious pasta meal. Savoury mince, pasta and béchamel is hard to beat. This last winter I was making what I called ‘deconstructed pastitsio’. Whenever I had leftover mince, I would cook up pasta and a little béchamel, combine everything in a deep wide frypan and bake. I got my pastitsio hit with minimal effort. If you have a ‘Smyeika soutzoukakia’ recipe, I would be keen to watch.
You know what...ALL ....PASTA is good there ain't one naughty pasta..BUT pastisto...IS THE KING...you gotta love the meat ..the bechamel...the Greek cheese this is comfort on comfort. The dish you snughle up to near a fire and savor the flavors...YUM YUM❤❤❤❤❤❤❤❤❤❤😘😘😋😋😋😋😋😋😋
Christine since, there is no contact informatrion for you, I am so intrigued in this dish, I make yours, but I also decided to see how many or how different some folks make their Pastitsio...and you know what the Greeks, have a THOUSAND ways.. from using condensed milk.for béchamel ..to parmesan cheese...to using brandy in the meat and parsley, to no cinnamon/cloves...To using pork, its ridiculous.. what is the TRADITIONAL WAY.. please let us know...is it because of the different regions of Greece that this dish varies ?? so love to hear.
it's a very complex question so I will try to give you some thoughts. Recipes are generally passed down through families so differences can be location, access to ingredients , among other things. It's agreed that pastitsio is usually beef or veal and the spices are always a part of the sauce. Condensed milk would be where people didn't have fresh but not classic. I hope this sheds some light on the story.

My favourite pasta dish that you make is the orzo with spinach, green onion, dill and feta!! It has been a staple since I watched that video. In fact, I had it this evening for dinner! It is so simple, quick, easy and yummy. As much as I love it when I first make it, I also enjoy it as a cold left over on a hot, summers day. LOVE your recipes!
Made the pastitsio per your recipe and it was amazing. I didn't do it exactly like you did. I don't have a pestle, so I used preground spices. I used a different greek cheese if I remember. The sauce I did to the letter, it was the best. Thank you!!!
I have made your lasagna many, many times and for me , it's #1. In fact, I think I will make it next week, it's that so darn good. Time consuming but after the first bite it is all worth it. Will definitely try the Pastitsio as that looks like a winner too. You are the best, and happy holidays to you.
I am torn between those 2 as my favs also. I have been stopped in a store about my lasagna recipe . I think you will find the pastitsio will have a similar effect.
I also love your: "Sausage Pasta My Family Can't Get Enough Of" video. That's the only way I make spaghetti sauce now -- unless I'm trying out a different one of your pasta sauces. They are all so awesome.
Would you do a navy bean&ham soup video? I cant make navy bean soup like my mom made and dont know all of what she used back in the 60"s & 70"s to make it taste the way she did. Thanks_ Rick from Ohio.
