As long as she is not saying anything bad we respect her and if she is saying something good about Islam that motivates others or even anything that can be globally considered knowledge while keeping her faith we respect her. And it clarifies doubts of people of the scriptures. (Indeed this Quran relate to the children of Isael most of that over which they differ) Quran 27:76. God (Allah) has revealed Quran after the old scriptures got corrupted over the time and He has undertaken to preserve it. Please get an english translation of Quran.
