I have filmed this video many times but it never made it up here, until today. Today I'm cooking Zambian food, Nshima with many side dishes. I'm Zambian and this is my favorite lunch/ dinner.

200G SMALL RED KIDNEY BEANS
1 MEDIUM TOMATO( CUT INTO SMALL CUBES)
1 MEDIUM ONION ( CUT INTO SMALL CUBES)
1/2 TSP CURRY
3000G HOT WATER
SALT
3 TBSP OIL
BEEF STEW
800G MIXED BEEF
1 TSP SALT
3 TBSP OIL
418GHOT WATER
310G HOT WATER
1 1/2 TSP THICKENER
1 TSP CURRY
1/4 TSP BLACK PEPPER
1 TSP CHICKEN STOCK POWDER
1 MEDIUM ONION ( CUT INTO SMALL CUBES)
1 1/2 MEDIUM TOMATO ( CUT INTO SMALL CUBES)
PEANUT VEGGIES
1 BUNCH OF RAPE VEGETABLE (A HANDFUL )
1 ONION ( CUT INTO SMALL CUBES)
1 1/2 TBSP OIL
140G WATER
SALT
60G GROUNDED PEANUTS
1 MEDIUM TOMATO ( CUT INTO SMALL CUBES)
CABBAGE STEW
1 MEDIUM ONION ( CUT INTO SMALL CUBES)
1 MEDIUM TOMATO ( CUT INTO SMALL CUBES)
1/2 OF A BIG CABBAGE
3 TBSP OIL
SALT
KAPENTA STEW
150G DRY KAPENTA
WARM WATER TO SOAK THE KAPENTA
1 MEDIUM ONION ( CUT INTO SMALL CUBES)
1 1/2 MEDIUM TOMATO ( CUT INTO SMALL CUBES)
3 TBSP OIL
BLACK PEPPER
SALT
4 TBSP WATER
NSHIMA
1500G HOT WATER
130G MAIZE MEAL FOR STARTER
280G MAIZE MEAL TO BE ADDED BIT BY BIT LATER
-START BY COOKING BEANS, PUT BEANS IN A POT, ADD HALF OF THE WATER COOK ON MEDIUM FOR 1 HOUR, ADD THE REMAINING WATER COOK FOR 20 MINUTES. IN THE MEANTIME CUT THE TOMATO FOLLOWED BY THE ONION, ADD SALT, OIL, CURRY, ONION, TOMATOES, MIX WELL AND COVER THE POT AND COOK FOR 40 MINUTES, STIR OFTEN, IT’S READY SWITCH OFF THE HEAT.
-IN A CAST IRON POT, ADD BEEF, OIL AND THEN TURN ON THE HEAT ON MEDIUM, ADD SALT, LET THE BEEF RELEASE ITS JUICE MIX WELL COVER AND LET IT COOK FOR 16 MINUTES, ONCE THE JUICE HAS DRIED UP, ADD 418G OF WATER MIX WELL, COVER AND COOK FOR 40 MINUTES, MIX EVERY NOW AND THEN, AFTER 40 MINUTES BROWN THE MEAT FOR 6 MINUTES, ADD THE ONION FRY FOR 3 MINUTES, AND THEN ADD THE TOMATO STIR AND COVER COOK FOR 3 MINUTES, STIR AND THEN ADD CHICKEN STOCK, CURRY, BLACK PEPPER MIX WELL, COOK FOR 2 MINUTES, ADD THE THICKENER STIR AND COOK FOR 1 MINUTE AND THEN ADD 310G OF HOT WATER MIX WELL AND COOK FOR 10 MINUTES STIR EVERY NOW AND THEN, IT’S READY REMOVE FROM THE STOVE.
-CUT THE WASHED RAPE VEGETABLES, IN A BIG PAN ADD 2 TBSP OF OIL HEAT ON MEDIUM UNTIL HOT AND THEN ADD ONION FRY UNTIL IT SOFTEN FOR 3 MINUTES, ADD THE TOMATO FRY FOR 6 MINUTES, THERE AFTER ADD THE VEGGIES MIX WELL AND THEN ADD SALT STIR AND COOK FOR 4 MINUTES, ADD THE NUTS STIR AND THEN ADD IN 140G WATER STIR AND COOK FOR 10 MINUTES ON MEDIUM TO LOW HEAT, MIX EVERY NOW AND THEN, IT’S READY TURN OFF THE HEAT.
-IN A BOWL PUT THE KAPENTA AND THEN ADD WARM WATER LET IT SIT FOR 5 MINUTES TO SOFTEN IT, GET RID OF THE WATER AND RINSE THE KAPENTA, IN A BIG PAN PUT 3 TBSP OF OIL HEAT ON MEDIUM UNTIL HOT, ADD THE KAPENTA FRY FOR 8 MINUTES, STIR , THERE AFTER ADD THE ONION FRY FOR 3 MINUTES AND THEN ADD THE TOMATOES, SALT AND BLACK PEPPER MIX WELL AND LET IT COOK 6 MINUTES, MIX EVERY NOW AND THEN, ADD 4 TBSP OF WATER AND LET IT COOK FOR 3 MINUTES, IT’S READY TURN OFF THE HEAT.
-IN A BIG PAN, ADD OIL HEAT ON MEDIUM UNTIL HOT, ADD ONION FRY FOR 3 MINUTES, AND THEN ADD THE TOMATOES FRY FOR 4 MINUTES IN THE MEANTIME CUT CABBAGE AND RINSE IT LET IT DRIP OFF THE EXCESS WATER, AFTER THAT ADD TO THE PAN FOLLOWED BY SALT, STIR AND COOK FOR 6 MINUTES, STIR EVERY NOW AND THEN, IT’S READY TURN OFF THE HEAT.
-IN A POT PUT 130G OF MAIZE MEAL, POUR 500G OF HOT WATER TO BRING TOGETHER THE MIXTURE, MIXING AS YOU GO, TURN ON THE HEAT ON MEDIUM, AND THEN ADD THE REMAINING WATER CONTINUE MIXING UNTIL IT STARTS TO BUBBLE, COVER AND LET IT COOK FOR 5 MINUTES, AND THEN START ADDING THE MAIZE MEAL BIT BY BIT, MIXING WELL BEFORE ADDING THE NEXT MAIZE MEAL UNTIL YOU GET A SOFT TEXTURE THAT CAN FORM A LUMP, TURN OFF THE HEAT, DIP A BIG SPOON IN WATER SCOOP OUT THE NSHIMA FROM THE POT PUT IN A SERVING DISH AND THEN PUT THE BEANS, PEANUT VEGGIES, BEEF, CABBAGE AND KAPENTA IN SERVING DISHES.
-SERVE IN SIDE PLATES AND ENJOY.
