Farro tabouli with Strawberries and Goat Cheese
Serves: 4 as a side
Prep: 15min
Cook: 30min
Ingredients:
½ cup farro, raw
1 cup water, for cooking
1 large bunch parsley, finely chopped
1 bunch mint, finely chopped
½ bunch spring onions, finely chopped
½ punnet strawberries, diced finely
¼ punnet cherry tomatoes, diced finely
100g goat cheese or feta, crumbled
½ cup pine nuts
Dressing:
1 tbsp. extra virgin olive oil
1 squeeze lemon juice or apple cider vinegar
1-2 garlic cloves, crushed
Sea salt and pepper
Method
1. Place farro and water in a saucepan, bring to the boil and let simmer for 20-30mins until tender, drain, set aside to cool.
2. In a large bowl combine parsley, mint, spring onions, strawberries, tomato, pine nuts and ½ the goat cheese.
3. Add cooked farro to the salad mixture and combine well.
4. Shake dressing ingredients in a jar, pour dressing over the tabouli, mixing well.
5. Serve with remaining goat cheese crumbled on top.
