Legend has it that Beach made the very first Zombie Cocktail for a hung over customer who needed to get through a long business meeting. So the first one was used as a Corpse Reviver style cocktail (HA!). The cocktail Beach made contained so much alcohol, disguised by fruit juice that the customer complained that the drink had made him a Zombie for several days. In fact when it went on the menu, customers were only allowed a maximum of two. The Zombie was a hit and soon other tiki establishments which began to pop up tried their hand at their own versions, but since Beach was notorious for making proprietary mixes whose ingredients were kept secret, everyone had to try and decode the mix. So now we have several different recipes for a Zombie over time. Thanks to the work of Jeff "Beachbum" Berry who worked tirelessly to decode Beach's recipe, we believe we have the Original version here. I will, though, as promised, shoot all the versions I know. Note On This Video: The Original recipe calls for 6oz of crushed ice and to be placed into a blender and blended smooth, so do that if you feel like it. For this video I decided on a whip shake/pebble Ice presentation.

Here's The Specs:
1.5oz. (45ml) Gold Puerto Rico Rum
1.5oz. (45ml) Jamaica Rum
1oz. (30ml) Lemon Hart 151 Rum
.5oz. (15ml) Velvet Falernum
.5oz. (15ml) Don’s Mix
6 Drops Absinthe or Pastis
.75oz. (22.5ml) Lime Juice
1 tsp. Grenadine
1 Dash Angostura Bitters
Mint Sprig Garnish
For those of you who don't know, Don's Mix is Donn Beach's Super secret combination of Cinnamon Syrup and Grapefruit Juice. Here's how to Make it:
First combine 250 grams White Sugar with 250 grams Warm Water. Add 3 sticks Ceylon Cinnamon and simmer for four minutes. Take off heat and let sit 24 hours after which strain out the solids. To make Don's Mix simply add 2 Parts Grapefruit Juice to 1 Part Cinnamon Syrup. The original was made with White Grapefruit Juice but I prefer Ruby Red.

Had these on a limited tiki menu I did for a friend's party. Everyone waited for the zombie and too many people passed out early on in the night. Great drink.

The trick to tiki is keeping everything simple and making your own syrups. 1. Buy an aged Jamaican rum like Appleton Estate to use as the base spirit (don’t bother mixing rums at first) 2. Use fresh limes 3. Make your own syrups (grapefruit cordial, orgeat, falernum, passionfruit, grenadine) 4. Start with daiquiri riffs, then get creative (Mai Thai, Hemingway, Hurricane, Planters Punch, Zombie).

Just a quick note about the blender technique: it’s extremely important to measure your crushed ice like Leandro mentioned. Also, use a technique called a “flash blend” where you just pulse the blender for around 5 seconds just to chill and dilute the drink quickly, rather than making a slushy

Dons Mix is cinnamon syrup and grapefruit juice. I did not see you mention that. Also, when I mix these, I move all of my bottles off to the side as I go so I can keep track of what I have poured. Not wanting to double up or omit something by accident. Typically I mix "Jet Pilots" as they have half the rum and a little less of everything else for balance, but it is the same drink. The blending should be done with a Hamilton mixer, flashed as it pumps air into it and creates a froth. Not a typical blended drink. This is one of my favorite cocktails.

I remember being a young bartender starting out in 1979 and my first Zombie was simply made like this - - - (Built): 1 1/2 oz Dark Rum, 1 1/2 oz Wh Rum, Orange Jc, Lemon Jc, splash of Pineapple Jc, and top with Apricot Brandy.

Living in Australia, it's more or less impossible to get 151 Rum other than Gosling's via Nick's. Ideally I would have Lemon Hart for my Zomies and Jet Pilots etc

If you are going to make more Zombie variations I would love to see the Charles Schumann version out of his book Schumann´s Bar (guessing it´s American Bar in the US). The recipe is: - 4 cl Lemon Juice - 2 cl Blood Orange juice (freshly squeezed) - 2 cl Pineapple Juice (freshly spueezed) - 0,5 cl Grenadine - 1 Bar Spoon Icing Sugar - 6 cl brown Rum - 2 cl white Rum - 2 cl brown Rum(overproof) - 2 cl Cherry Heering

"For those of you who don't know what Don's mix is...." We still don't know what it is, except it contains grapefruit. Is it just a grapefruit juice/simple syrup mix? Something else added? Would be nice to know!

Don’s Mix is a mixture of grapefruit juice and cinnamon syrup. To make it, mix 2 parts grapefruit juice (historically white) and 1 part cinnamon syrup. If you want something a little sweeter go 1:1. Hope that helps

according to a standard cocktail ABV formula, even if you only use 80 proof rums in this, the final abv will still be 20-25%. with the 151, its closer to 32%

Ok just created my first real zombie and it was epic! According to martin cate instead of 6 drops of absinthe its 2 dashes of herbstura(a mix of herbsaint and angostura bitters). I could not find herbsaint and just dashed some angostura. I found that upping the falernum to 1 ounce to be more rounded but thats just my personal preference. The question is, do you believe absinth+angostura bitters mix would bring better results? since herbsaint should be an anise based spirit?

Regarding the blender, it’s not a traditional blade blender, but a drink mixer/milkshake mixer. Donn didn’t use shakers or blenders, in the traditional sense, he only used drink mixers/milkshake mixers/spindle mixers, whatever you wanna call it.

I am fully aware that beachcomber used a drink mixer a la Hamilton Beach, but he was flash blending because he was using crushed ice. I am using pellet ice which is a much different thing. Not sure that using a drink mixer will make a superior drink. Im going to put this to the test!

The Educated Barfly it definitely will. I make tiki cocktails at home regularly, using pellet ice and flash blending the majority of the cocktails I make. It makes a world of different in the dilution and aeration of the cocktail.

Tiki is something I haven’t really worked at in all the years I’ve been knocking out classics I decided to perfect it on this channel with you guys as my witness. My intention is to make every tiki cocktail published. I will definitely put the Hamilton beach through it’s paces and make a video on it.

I make a grapefruit cordial (equal parts sugar to grapefruit juice) for this and the Hemingway daiquiri. When making this drink, add 1/8 tsp ground cinnamon before blending.

I would also suggest making your own. Never tried the recipe Dillon McGraw posted, but falernum #9 (with a little less lime juice) is a really nice one and it's quite easy to make. Just google it, definitely worth it!

A question to any Americans in the comments: Why is the Zombie so hard to find in the US? Or is it just Austin where I recently moved to? I come from a European country and you can find a zombie at basically every bar that makes cocktails, even if it's not a cocktail bar...I've been in so many bars in Austin, and only 2 of them have it (one being a pretty upscale cocktail bar). Even in fucking New York, I couldn't find a zombie and I went in 5-6 different very nice cocktail bars there, none had it...Is it just dead in the US now? Am I just unlucky?

I think you’ll be more likely to find a proper one at upscale coastal bars. Too many ingredients and not worth the time making for busy/cheaper bars.

Used to hit these drinks at da club back in the day. The idea was to get the most for my money as a college student. LOL. Boy, did I have lots of blackouts and hangoevers due to this dangerously flawed philosophy.

Are zombies supposed to taste good? Every really upscale really authentic tiki bar I go to I order a zombie and it always tastes terrible completely unbalanced way too strong (and I like strong drinks) and just seems like something is missing. Are all these places just messing it up or is it just a crappy drink that people only have because it's a classic and it has a bunch of liquor

Not adding enough dilution more than likely. 4 shots of rum needs enough liquid to balance it out. This is why I prefer frozen with plenty of ice over flash blending. That or maybe just use a normal amount of alcohol.
