Zucchini caviar😋
1,5 kg of zucchini (2 lb + 21.4 oz)
400 g onions (14.2 oz)
400 g sweet bell pepper (14.2 oz)
400 g tomatoes (14.2 oz)
300 g carrots (2/3 lb)
200 g of mushrooms (7.1 oz, eryngium, or champignons, oyster mushrooms)
garlic (to taste)
chilli pepper (to taste)
30 ml of vegetable oil (1 fl.oz)
salt (to taste)
🥕Prepare the vegetables.
1. Wash and chop the zucchini into small cubes.
2. Wash and peel carrots, cut carrots, mushrooms and bell peppers into small cubes.
3. Blanch the tomatoes, remove the skin, remove the core and cut into small cubes.
4. Remove the seeds from the chili peppers and finely chop.
5. Crush garlic through a garlic masher.
6. Finely dice the onion.
😋 Prepare the caviar.
1.Put the oil and all the chopped ingredients in a saucepan, salt.
2. Add 100 ml (3.3 fl.oz) of water and put to stew over medium heat for about 1-15, hours. Stir occasionally.
3. Add chopped dill, bring to taste with salt, remove the caviar from the heat, let cool.
4. Whisk the caviar with a blender, if desired.
