Share your zucchini recipes with Doing Things Different

This is a very easy recipe. It is so delicious!!!! What a great way to use up zucchini.
4 cups shredded zucchini
1/2 tsp salt
2 eggs
1/2 cup parmesan cheese
2 cups shredded mozzerella
1 cup shredded cheddar
1 lb ground beef
1 jar tomato sauce
Optional- onions, green peppers, black olives, diced tomato, Italian sausage, pepperoni
Preheat oven to 400 degrees.
Place zucchini in a colander and sprinkle with salt. Mix well. Let stand 10 minutes and squeeze out extra liquid. Combine zucchini with eggs, parmesan cheese, and half of shredded cheese. Press into a casserole dish and back 20 minutes. Cook beef and other toppings. Drain and mix with tomato sauce. Spoon over zucchini mixture. Sprinkle with cheese and any other toppings. Bake 20 more mins.

Great recipe, Sara! People often think you can't use zucchini once they grow too a certain size, but even though their skin hardens, the flesh tastes the same when shredded. I freeze tons of it to use throughout the winter, and I'll definitely try out this pizza dish for my kids who eat cheese. 😊

If you want the zuchinni dry then you could use frozen zuchinni too That way when you defrost you can dump out the liquid;)

this is great, I have a few similar zucchini! thanks for the idea! you may already know this but that green top on the parm cheese is the same sized as a regular sized canning jar lid...so it's great to use for herbs etc on a canning jar when the cheese is gone.

Great way to use large zuchinni Im keeping a few big ones in the garden because they do store better and they are bigger already lol so i will have lots of grated zuchinni later lol How long was your longest zuchinni?
