So much easier to water bath, not having to sterile jars, lids, rings, fork, funnel, cloth, plate. The relish looks great.

@@lorrainestone I asked my mom....she doesn't know how it would affect the recipe. Id try it with a single batch and go from there. This is so good but definitely sweet. 🙂 Let me know if you try it.

Was the peeling too hard? And did you shred the seeds also??

We cut off the tip where the blood was and the bottom that attaches to the plant and any bad looking spots in the skin. Other than that, run it through the food processor. If it seems a bit tough, it will soften as it cooks. I promise, it is SO good. 😍

Why are the peppers added last? Can they not go in with the zucchini, onions and salt at the beginning?

You can try it. This recipe was given to my mom when I was a little girl and the lady that gave it to her had been making it for decades....that was how she did it and how we have always done it. Can't hurt to try though but it may make it taste more salty.
