I used cottage cheese instead of ricotta, and chipotle chile pepper instead of smoked paprika. It turned out awesomely and my family loved it as well! Thanks Chef John!
I am suffering from SZF so I'm def going to try this. I'm going to mix some fresh parmesan cheese in with the ricotta though.. zucchini + parmesan cheese = amazing.
The way you cut the zucchini is the way a lot of Chinese food is prepared, haha. I never really knew why, either, but maybe it really is just 'cause triangular food tastes better! XD

In Uk Zucchini is like is everywhere in the supermarket right now. When i dont know what to do with my load of Zucc I just cook them with butternut carrots with bit of onion and garlic (sauter), red lentils a bit of soy sauce pepper dry crush chilli and a little bit of tamarin powder. Then I blend it into a soup then finish it with lemon juice on top. while you eat it just shower a bit of parmesan cheese. Boring zucc become exiting zucc. Thanks chef.
I tried this recipe three times so far, twice with mint and once without (coz i ran out of it).. It still tastes ok without it, but its SO much better with the mint.
of course you can. if you watched him before he always tells you that you are the boss of your own dish. dont like mint? use basil (if you like that) or whatever herb fits you. dont like zucchini? use mushrooms. just dont call it minty zucchini then and you are all good :D cooking is about having fun and trying something. so go and try! I love zucchini! My favorite is teriyaki zucchini sprinkled with semsame seeds. With home made teriyaki sauce, of course. It's a great side dish for sushi :D
Funny how Chef John description and voice nearly make zucchinis attractive. I'm pretty sure he could describe a caulilower dish (sprinkle with cilantro) and nearly make me want to try to touch it with a 10 foot pole.
Chef John, is ricotta pronounced "Ra-cot-a" or "ra-coat-a"? Had to ask after you said "ra-coat-a" in this video, but "ra-cot-a" in the last pierogi video. Either way, this recipe looks fantastic.
Chef John, I had a zucchini plant grow way too big before I noticed it in my over crowded garden. What can I make with it aside from zucchini bread? Will this recipe in the video still work? People have been saying and older zucchini tastes too different to use it in the same recipes. Please help!
