I made this just now. I used pulled rotisserie chicken instead. Bad move. It basically turned it into a bean/chicken/cheese dip. Still tastes good though so live and learn. Thanks for this recipe! I'm always looking for weekly lunch meal prep that I can take to the office with the me. Cheers.
Im nervous about the cottege cheese. But this weekend, i may try it. I normally skip breakfast, since between work and getting ny kid ready for school, i just dont have the time. This last week i meal prepped breakfast sandwiches, and i actually ate BEFORE 2pm 😂 So now i wanna try burritos
@ethanpaff well, I made it slightly different because honestly I didn't fully pay attention, but, it still came out ok. I used Spinach cuz that's what I had, but I didn't buy extra eggs, so mine only had about 1 egg per 'rito. Not as high protein but since I am the newest of new at trying to better my diet, I figure this is ok. 😂

In the description I wrote: “Mix all ingredients and let sit for 30 minutes, kneading every 10 minutes (3 sets total). Let rise for 1 hour.” What I mean is to let the dough sit for 30 minutes, folding it for every 10 minutes of that 30 minute block of time. You form the dough, let it rest for 10 minutes, fold, let it rest for 10 minutes, fold, let it rest for a final ten minutes, fold a final time, and then you let it rise for one hour without touching it. I hope that helps, but let me know if it’s still unclear.
Just made this and it turned out excellent. Followed exactly except I didn’t use unbleached flour and i definitely added slightly more water instead, then again my flour was about 500g. Thank you so much!
I wrongly assumed that “guilt-free” meant no animal products. What is it, then - the lack of sugar? So, sugar causes guilt, but animal suffering doesn’t. Got it
Are they really almost 700 calories each? I made one and it tasted really good, but I ate it in about 30 seconds and didn't feel very full after, so it felt like it was around half the calories. Maybe its because I didn't follow the recipe exactly, I used less eggs and no fat cottage cheese (shop didn't have ones with fat), also used normal tortillas.
I’ve been making something like this since starting keto @ 3 months ago,but I use Stevia or Monkfruit instead of honey. I frequently add sugar free cool whip and whisk it up till its light and fluffy. Sometimes I use instant sugar free dry pudding or jello to make different flavors,instead of the cocoa & sweetener.
I just use Fairlife fat free milk and sugar free instant pudding. Add in a scoop of protein powders and it actually tastes like pudding. This seems unnecessary.
I know this video is over a year old but could I just store the burritos in the fridge and eat them over the next few days? How long do you think they stay good for in the fridge?
You can up your kale game by grilling and charring it. Cut it up a bit, toss with salt, pepper, and olive oil. Then using a cooling rack you can grill it on an open flame until it chars up.

Sometimes there’s more moisture in the cottage cheese than at other times. Therefore, it can be between 10 and 20 minutes. You’re just looking for the mixture to start to give some resistance to movement. It will sound more sticky, and if you dip a spoon into it the mix, the mix should slowly fall off the spoon. The most important thing is letting the mix cool. It will get way thicker than you expect when you let it cool.
The title is a little misleading, since pudding is made with gelatin. Gelatin is also high protein. So basically, you’re making high protein flavored yogurt. Still looks extremely delicious and I’m still gonna do it, I just won’t be calling it pudding! Lol.
