I see this “recipe” as more of a concept or technique than a true “recipe”, but if you want the deets for how I make this breakfast for one serving, here ya go:
INGREDIENTS
350g russet potatoes
4 large grade A eggs
56g Goodshall’s turkey bacon (or 110g lowfat whipped cottage cheese)
20g mozzarella cheese
Cilantro for garnish
Salt, pepper, other spices to taste

This is a fantastic recipe, but I'd like to call out you saying that this recipe isn't "revolutionary". That's one of the main reasons this recipe is so good. As a cooking novice, a lot of instructional cooking content out there is aimed at (im guessing here) intermediate+ cooks, mostly because I figure the more difficult recipes look more impressive and thus get more clicks. The hardest thing for me when it comes to cooking is dealing with the "trial period" of a new recipe, and the more universal the ingredients, the less painful this part is. Every ingredient used in this video is a kitchen staple, and the principle you espouse of Potatoes Meat Eggs is a good way to call back to the fundamentals of *why* this dish works in the first place. It's a rare example of content that bridges the gap between the abstract fundamentals and a recipe tutorial. Other things you do well: - You take the time to introduce each ingredient and show the full prep process, even for something as simple as a potato. - Just showing us the nutritional label on the container (I'm not sure why I appreciate it being part of the shot like that but it's nice, maybe it feels more "real") - Not trying to oversimplify what you're doing, I appreciated that you didn't at any point say "just make scrambled eggs with your meat and veg" even if that is what you're doing - Using the simplest available tool (not sure if you did this on purpose or just #budgetlife) - Not including unnecessary measurements for seasoning etc. You do show how much you're putting in which is good, measuring seasoning isn't bad or anything but it is very much a "feel" thing, and the only way to develop the feel is to try.

I was just talking with a friend about my frustration with food RU-vidrs totally missing the mark of bringing down to earth - and making tangible - recipes that are too often only presented in an abstract and aesthetically appealing way. It gets clicks to show crazy food creations, sure, but my aim isn’t to impress. I don’t even have a culinary background or the education for one that would support a professional image. Instead, my hope is that I build an image around making good, wholesome and healthy food accessible to any and everyone. I hope to keep providing content that achieves what you described well here, bridging that gap between abstract and actionable. And I appreciate how thorough your review is and will most definitely consider your points in the production and editing of my many videos to come. Btw, I hope you stick around. If anything I hope other food youtubers pick up on how you pace your videos. It's one of those things where you see something that just hits all the right notes for what it should be. Honestly you said this in such a perfect way I can’t think of a single word I would replace, because it is EXACTLY how I feel about food videos. I am a complete novice and I want ideas that are extremely easy to both understand and make. This video is a prime example of something I’m looking for when I come to find things to make in the kitchen because I need it to be both simple and easy which this video did perfectly. Something this is also underrated for is how you can expand it, meat eggs potatoes. Throw in some chorizo and a tortilla you have a breakfast burrito. If you swap out rice for the Tate’s you can throw on soy sauce and make a Japanese style thing with spam or fish. Throw it in a pita role with chickpeas and Tika misala tatziki or tahini. I get bored with food and stop eating all together. This can fix that for you

Absolutely. This is a basic “recipe” and is meant to be used as a base for good nutrition. Do what you want with it! I sometimes sub out the potatoes for one of my tortillas and meal prep a week’s worth of breakfast burritos. Sometimes I change up the spices and the meat I use and top the whole thing with homemade kimchi. The possibilities are truly endless. ✌️

I’m a college student and find it so hard to make time for breakfast. Usually if you meal prep before it’s a huge commitment or I end up making an egg and a piece of toast and get hungry quick after. Love the idea of doing this quick before bed and heating it up to fuel me through my 8 am! Excited to try it!

My great aunt lived to be 94 and ate the same breakfast every morning from when I was a little girl in the 1970s until her passing in 2004: a bowl of maple brown sugar cream of wheat, one slice of whole wheat toast, fresh squeezed orange juice and coffee. Breakfast of champions!

Sir, this is the way. I'm 55 and have tried everything for breakfast... cereals, overnight oatmeal, but the best has always been eggs/meat/potatoes. I just feel better after eating real food instead of processed cereals and oats. Peace! Pete in AZ.

Ive been on a strict diet for about 10 months now (im down 127 lbs!!!!), and i have fallen into the same routine. Eggs, meat, cheese, potatoes. I need to start throwing in the kale or spinach as well. Ive been adding green onions. My favorite protein to add is chicken breast but ill def start trying the cottage cheese. I look forward to breakfast every morning!

I don’t like to be that guy, but dietary cholesterol actually does affect serum cholesterol, just less than other factors like saturated fat, obesity and eating processed food. I’m not denying everything he said in the video, our liver does have the ability to regulate serum cholesterol to a certain degree, but this doesn’t mean you should eat all the cholesterol you want as some influencers would like you to believe. I don’t blame him for believing in what he said in the video either, many influencers are pushing the idea that dietary cholesterol isn’t harmful in any way due to misinterpreting scientific data, the one study that doesn’t show correlation between cholesterol consumption and serum cholesterol is really bad quality, one where they didn’t have a control group and didn’t know the baseline consumption of cholesterol to compare it later when dietary cholesterol was increased in the participants diet, hence not knowing what even was the increase in dietary cholesterol consumption. On the majority of studies there’s a clear correlation that dietary cholesterol increases serum cholesterol, and this effect is increased when the baseline consumption is 0mg and is less and less noticeable when the baseline consumption is higher. If you want to look this up search for Dietary cholesterol effects on serum cholesterol on pubmed, it’s worth knowing

so i just finished making something very similar for lunch today after watching your vid last night. 340g of spudlite potatoes, 125g of chicken mince, 50g of mushrooms, 75g of frozen spinach, 3 large egg whites, 2 lite laughing cow cheese, low cal bbq sauce and sriracha and its so delicious and around 510 cal with 46g of protein so im so thrilled i found your vid!! cant wait to see more awesome content

This concept is similar to what I do for every meal. Best thing is you can switch up elements easily depending what you have on hand or what your preferences are. Like when I was vegan, I would basically have this but sub the eggs for scrambled tofu or beans and maybe 'meat' slices if I had them. Such a simple concept and so tasty

Making this tonight, I do my best to make my meals everyday too but I've always struggled with breakfast prep and I'm not a fussy guy so this fits. Substituting cilantro for green onions and skipping the shredded cheese. And ground turkey instead of the turkey bacon.

Parsley adds a freshness to dishes but if you put on the heat too early it will cook the flavor out added it at the end of your meal. If you have fresh parsley added it right after you turn the heat off! Great video!

I've been eating the same thing for breakfast for at least 2 years now and some people find it strange but I don't. It is almost a comfort because it doesn't change. I eat an egg sandwich, sometimes with bacon but usually not. I don't like to add cheese directly into my eggs so I add it to the sandwich. Again, it's comforting and I don't get near as hungry as eating something else. Thank you for the video!

I made this for my partner and I, we don't have very big appetites so I split this into six meals instead of three (three for each of us) and it's delicious! I add in mushrooms and top mine with sour cream as well, it goes perfectly. I'll definitely be making this all the time since breakfast always seems to be difficult for us to plan for

I do the same thing, though I vary up the potatoes with sweet potatoes or rice. I usually stick with spinach, mushrooms, onions, and tomatoes, or cabbage if I’m really trying to add lots of low calorie volume on a cut.

My breakfast is normally a giant baby spinach salad with homemade salad dressing EVO as the base. I’ll throw in eggs sometimes bacon. You’re supposed to eat 5 cups of salad a day, more if you’re a bigger person. It is a huge amount 7-10oz worth. For me it makes me energized while not feeling full and bloated down. (Sometimes you’ll need a snack in between lunch and breakfast lol)

I would like to make a recommendation if I may: When it comes to this magnificent source of life, also known as potato, you should aim for a type with yellow flesh. Preferably an old variety which hasnt been molested much and is close to it's original form. Not only are those delicious, they contain more nutrients aswell. Never cooked a potato in a microwave until a couple months ago...I usually eat bacon/sausage, egg, onion, bell peppers and potato (pan fried) when I cook breakfast. I'll try microwaving sometime since cooking the potato takes the longest amount of time. I'll try adding kale or broccoli, what ever is cheaper for some greens for my breakfast. I also use siracha as my sauce.

Great vid, you think like I do the way you explain! So I've been developing a weight loss 10 year breakfast. 2 hard boiled eggs, cup of yogurt, handful berries. Then EITHER oatmeal with spoon on peanut butter OR Avocado toast (recommend frozen avocado chunks, way less prep) Love to get your thoughts.

I think that if the macros are right and that it’s an enjoyable meal to have on a consistent basis without being too expensive, then it could be a winner. I’ve tried breakfasts like the one you describe and unfortunately the ones I’ve made have felt too busy. Just too many things going on and too many aspects of the dish to keep track of to be practical. Again, though, if you can find a way to make the process of creating the meal more streamlined (like bulk prepping the eggs and having ample supply of frozen avocado), it could work. Thoughts? ✌️

Well the yogurt eggs and berries are all grab and go, so the decision that allows for 1 simple choice is oatmeal or avocado toast. I use a keruig for instant hot water to make super quick oatmeal, throw it in the microwave for only 60 sec and add spoon of pb Toast in, then Food processor for frozen avocados, lemon juice salt and pepper, spread ready for toast

Thank you for this recipe. This is now one of my regular breakfast dishes and I've changed it up here and there time to time. I'm working through all your videos and every single one so far are just awesome. You use ingredients like a "lazy" cook. I mean that kindly because I am also a lazy cook. I want fast, tasty and easy cleanup. On top of that you do it in such a way where it's possible to meal prep for the week too. Plus, the ingredients can change time to time! So I love this format. Like here is the base, and the rest is interchangeable. Cilantro? Sure. Different spices? Hell yeah! Different meat? Totally! Personally I make a smaller serving than you (2 eggs, 1 potato) and do it on the day I make it, but the option to meal prep is there and I love that because I know I can store these if I can't finish it. Even my smaller serving is too much for me in one sitting! Haha Thank you for sharing your recipes 💚

We do eggs in fried potatoes n onions n garlic, sometimes celery Bake pots ahead. Scramble eggs right in. Cheese on top is good but generally its a glass of kefir with it. Kids don’t like greens in it so they’re on the side. I love greens tho n prefer them in it. Shrms great too. We only have meat at dinner as I can’t afford it. Dahl n brown rice or whole-wheat chapatis for lunch everyday but 1.

My first of many go at this: - single serving - 2 smallish russet potatoes, skin massaged w/evoo (my microwave doesnt allow me to select the number of potatoes; it took 3 times on the potato selection until the skin was crispy to my liking; def altogether shorter than 15 min by prolly half) - already cooked chicken thigh meat heated up in pan (maybe equivalent to 1 v small thigh); 3 small garlic cloves chopped up added; 1/5 can of black beans w/juice added - after that has cooked to my liking move it all to side of pan and add evoo and scramble 2 eggs in the pan slowly incorporating everything else periodically (dont overcook eggs, theyll cook more in next step) - break up potatoes in the bowl they cooked in; add slice american cheese; add pan mixture; black pepper/hot sauce to taste; nuke 30 sec - combine everything; more hot sauce/black pepper to taste; add cold good quality marinara sauce to taste; add fresh italian parsley to taste *chefs kiss*

I do something similar. I cook it as a frittata in a very large pan, then slice it into 16 slices. A meal is usually 2 slices, sometimes just 1 for a sandwich or taco. The base is about 10 large eggs, 2 large diced potatoes, about 1 large diced onion. Then I usually add a generous amount of mushroom, kale and either salsa or marina for flavor and nutrition. I eat it just about every morning on a sandwich, taco or burrito. Taco is the cheapest since corn tortillas cost about 3 cents each. I don't add any meat or cheese to the frittata, because I found those flavors tend to disappear into it. It's better to add small amounts of meat or cheese as a topping when serving to maximize flavor and minimize cost.

Somehow I’ve never thought of just baking and smashing up the potatoes, that’s brilliant . The extra effort of making a hash or hash browns usually keeps me from bothering to add them, and I just go with plain scrambled eggs.

re:wondering if parsley does anything for flavor, try putting some dried parsley in some hot water and giving it a good sniff. those volatile flavor compounds that are released are what's going into your food, and while they may be earthy and or even overbearing in isolate, it brings that earthiness to the dish, and can help round out an otherwise thin tasting base

Looks good! I think I would throw that in the oven for about 20 minutes though just to melt everything and brown the potatoes a bit.......just my preference

For a similar breakfast, I use oats instead of potatoes/beans because oats are not only cheaper than but higher in protein. Usually the vegetable is only onions/garlic, although if I find a cabbage on offer, use cabbage.

Good ideas. Thank you. Also try it by replacing the green vegetables with zucchini, spinach, bell peppers or mushrooms. Or mix all together. Also try at least once since you eat healthy. Fry fresh tortilla chips with olive oil, remove most of the oil, on the same pan with chips add eggs. Once on your plate add ketchup. So good. You can also substitute meat with winnie. So good.

This video is a godsend. Been trying to meal prep for a while and I always get bothered by the large amounts of cooking and prepping time. I woke up this morning, microwaved some potatoes, fried some ham and eggs and added a sprinkle of cheese all within 10 minutes. Great n tasty as well!

I ate the same thing every day for over 5 years. I was eating omad and had chicken and broccoli and cheese. Every. Day... It was the early 2000s, everything was low carb. I was a model and that diet worked well with the job. Oddly enough I still enjoy chicken lol

I would only suggest that you switch out the iodized salt to kosher salt. It tastes better (less salty and flakier)::::: among other things.

You are right about the lies we were fed about eggs and cholesterol, which is why I was supposed you are going low fat cottage cheese. Consider the milk fat actually makes the nutrients more bioavailabile. Love this. I use cauliflower in place for some of the potatoes

Kinda interesting the traditional breakfast in England where I live is a fry up. Including eggs, sausages hashbrowns and mushrooms, and toast. Our version is kind of unhealthier though because everything is fried. But tbh noone eats it everyday Your breakfast looks so good btw

@@ethanpaff same as you, I have a template that I switch up every now and then: - fruit (usually 1/2 banana, couple handfuls of frozen avocado pieces, a big strawberry) - almond milk - scoop of Vega protein powder - random supplements of the moment (maca powder, chía seeds, chocolate nibs, flax fiber mix, wheatgrass powder, powdered collagen, hemp seeds.) Delish. It's like eating ice cream every morning, but it's healthy. I have found that it's not super filling, though, and I need something an hour and a half later, so I usually have a peanut butter cliff bar at 10:30.

Nice! Yeah the “not super filling” aspect has been a big issue for me when it comes to smoothies and the like. I did use to make one that was 600-700 calories, 60g protein and tasted like chocolate milk. It was great! And super filling. However, not much nutrition in that one. Maybe I’ll be able to take some inspiration from your breakfast idea and come up with a breakfast or snack smoothie that ticks all the boxes. Maybe not. 🤷‍♂️ Thanks! ✌️

"What would your 10 year breakfast be" - Unsweetened yogurt, an apple, seeds and berries of all sorts, dehydrated ginger, coconut chips, a slice of pumpernickel bread, whole wheat flakes, possibly mango, pineapple or custard apple if there are any laying around, some nuts. At least the first four ingredients are a daily constant, even when there is no breakfast and dinner is the only meal. Also because the yogurt is used to mix the daily dose of moringa powder together with some matcha to complement.

@@ethanpaff Most healthy chickens in their prime will lay an egg nearly once every day. It's just my gf and I and we have 6 chickens....half a dozen eggs every single day adds up REALLY fast haha, I think we'll probably reduce to 3 or 4 soon. But chickens are awesome, pets that literally feed you in return, and the quality is unmatched.

Steel cut oats in plain Greek yogurt a little cinnamon,honey, and maple syrup just a little. Leave it overnight in fridge toss some raisins in before I eat it. I think I miss 3-4 times a year.

Sounds delicious! I used to do the same along with some scrambled eggs and sausage. Basically the same principle applies: “[carbs], meat, eggs”. The main carb doesn’t have to be potatoes. Sometimes it’s oatmeal or barley and sweet potatoes for me. Sometimes I sub in a little homemade bread. ✌️

Russet potatoes also have like 98% of the nutrients of sweet potatoes which get a much better reputation for health compared to other potatoes. Great for potassium for example.

Change it to Oaxaca cheese add corn tortillas and boom breakfast tacos all week! I do chorizo or ham, potatoes matchstick cut with the mandolin, jalapeño, bell pepper, egg. 20 minutes and a weeks worth of snacks. I cook new eggs each day
