I mean...irl herbivores are more dangerous than carnivores. Just look at hippos. A carnivore hunts when it's hungry and has to be smart about it to not get hurt: a herbivore attacks when it percieves a threat and will go all out if it gets the chance.

I'll be the first to say it. The Azure Rathalos vs Seregios one is kinda dumb. Like, the hunter just walks in and goes "Wowaaahh??! An Azure Rathalos?! OH NO, A SEREGIOS??!!" Dude really needs to look where he's going.
Here is hoping that one day we get a spin off, where we are not a hunter, but a guild member that tracks the monsters, to fill in entries, make studies based on their natural behavior, and generally avoid fighting. It would be so cool to go on a expedition, and spend half an hour tracking a monster, having to use different tools, and devices to estimate its size, age, and its usual habits. Like is it a aggressive hunter, or maybe it just kills something to eat, before passively walking into areas with prey that runs away, not even caring about them. We could implement chases, if you got to close/ made a mistake that drew its attention, and we can use different tactics to divert it, or escape.
I would personally love to see a mission where you actually meet a female and/or non-breeding season male Mizutsune and just interact with them. I imagine anything besides straight up attacking them would earn you an annoyed shove at worst. You could even walk up to a fishing hole and cast your line while the Mizu was fishing and it wouldn't even give you a second thought.
