Ciao, no the pasta with the rolling pin is super soft, made by hand. Only with the machine you can fold a pass with the rools in iron to make it thiner. With the rolling pin you just have to rool to have a very special soft delicate and extensible pasta. If you fold with the rolling pin is not possible to have a very thin sheet. Try and let me know! I always use 500 grams of flour with 7 eggs, but it comes a crumbly after i kneed it, so i throw the extra flour that doesn't stick to the dough. Do i need more eggs ??? Mine is like the 2nd one but it's soft after I kneed it
Yes, try first with 500 gr flour "00" and 5 eggs. This is the classic portion. After if is too soft and sticky add more flour (start with half spoon for example) and then add more, just to arrive the the consistency of the palm of your hand. Or the contrary, if it becoming too hard, remove some flour or add a bit of water (or a quarter of egg) Again if after 20 minutes in the plastic is still too hard, leave it for 20 minutes more in the plastic .
