Hey Josh! I’m josh as well! And I also have an excel hustler! Mine is 4400, with a 3cyl Kubota D905 and I love it.. except for the weight. On even slightly wet/soft ground it will sink like rock.. I’m considering converting mine to a full track unit. (Think like a tracked skidsteer, or mini trackhoe)

I have one that they call an excel hustler with the gas vsg411 motor doing 72 cut and a toro ground master with the same motor and 72 in cut also. love these old units.

The best I can remember is maybe around 4-5 hours.

@@justjoshin2020 thank u. My 9 pounder shoulder picnic took 9 hours. Came out great tho..gotta have the wireless thermometer. The energy some people waste by opening it over and over and the smoke lost over and over isn't worth not having that thermometers cost of $60 or less for most. Off topic but I recently got one myself and I'm glad I got one finnally.

It probably wouldn't add too much time, but just in case you may want to give yourself an extra 30 minutes. I would just watch the ones on the bottom, they will probably cook faster being closer to heat, on a vertical smoker like this. Thanks for watching!

Just happened across your channel and watched your video. Appreciate the info as I am new to Pitt Boss Smokers. I had to laugh though when you said the Nashville Hot had a "little" spice to it. Nashville Hot has become so commercialized that the overwhelming majority of people would die if they knew what Nashville Hot really was. Come on down to Nashville and make a stop by Hattie B's for some real Nashville Hot Chicken! You wont know what hit ya and you will never view those commercial flavors the same again. Nashville Hot doesn't have a "little" spice to it! LOL

Thanks for watching, total cook time was between 3-4 hours and no you don't have to use a steam pan it's just more convenient. You could leave it uncovered or wrap it in tin-foil.
