The amount of practice it takes to make these perfect everytime is crazy lol. I still have a ways to go before I hit this level but my technique is improving with each set. Definitely have to have it in the slightly medium peak range to have it be smooth
Absolutely incredible! I'd love to know what kind of meringue you use, what you use to colour the meringue, and how you set them. My Mom and I would tell stories of a momma and baby sea otter on hikes when I was a kid. If I could manage to make one of these, although I'm sure it wouldn't be as spectacular as yours, she'd be over the moon.
Thank you! 🥰 I use Italian meringue with a little bit of cream of tartar for extra stability. I use Wilton and Chefmaster gel based food coloring. Not sure what you mean by setting them, but I bake them at 200F for 2-3 hours. Hope this helps! ❤️

I have the recipe pinned in TikTok and somewhere on Instagram. Someday I’ll post it on here. If you do follow my recipe, be sure to heat sugar syrup to 240F before whipping into egg whites (I misspeak and say 140F in the video 😅). Any Italian meringue recipe should work, though!
