Watch and learn the piping technique to make mama and baby otter meringues for Mother’s Day!
I wanted to make an ocean-inspired drink to float them in, so I froze some Rosemary and thyme to the bottom of the glass with some skinny blue lotus. The fresh herbs are supposed to look like kelp. 🤭 Then I scaled down the following recipe to fit in the glass:
• 1.5 oz skinny blue lotus energy concentrate
• 0.5 oz sugar free coconut Torani
• 0.5 oz sugar free mango Torani
• 12 oz club soda

Absolutely incredible! I'd love to know what kind of meringue you use, what you use to colour the meringue, and how you set them. My Mom and I would tell stories of a momma and baby sea otter on hikes when I was a kid. If I could manage to make one of these, although I'm sure it wouldn't be as spectacular as yours, she'd be over the moon.

Thank you! 🥰 I use Italian meringue with a little bit of cream of tartar for extra stability. I use Wilton and Chefmaster gel based food coloring. Not sure what you mean by setting them, but I bake them at 200F for 2-3 hours. Hope this helps! ❤️
