here's my main question - why go with Vietnam over Thailand? Thailand the weather generally significantly better, correct? that would be my main hesitation. But I do love Vietnam and have visited many of the cities, including Da Nang and Hoi An

Vietnamese here. Living in Vietnam on $1000 per month is possible, but only if you are single and have no social life, no dating, and no weekend hangouts ...etc. Additionally, don't forget to save money for an emergency flight back, as there is no healthcare aid available.
I have been living in Thailand for two years, and I also had two short trips to Vietnam in Hanoi and Da Nang for 10 days each. In my opinion, Thailand is much more comfortable to live in. Prices are on average the same, may be +10% for Thailand.

I had safety wing for 3 years. I never made an insurance claim it's too time consuming and complicated so i just cancelled it. If you have 10k USD in the side you don't need international health insurance it's a waste.
