Having that cutting torch trimmed that close to the case makes me nervous. That aluminum will melt in a heartbeat. I know you know what you are doing. I like knipex tools too!
As a Guzzi owner (sadly no Ambassador or Eldorado) myself, the old Eldorado and Ambassador are the most beautiful bikes there are. The original 850-T is a close 2nd.

Why do you loosen the cylinder head bolts, before you torque them, Just torque them, and put the parts back. Anyway you only need to to tighten it after having had the head off.
If you measure the components and they are within spec, there is no need to replace them. Without knowing anything at all about the bike, the components may not be showing appreciable wear. I have rebuilt numerous engines and I always refer to manufacturer specifications as well as being aware of the general condition of the individual components. These guys are very specialized and I am sure they forget more stuff about these engines than I know.
Did you not forget to tell people the 2 bottom bolt in the rear bearing should be mounted with a little silicone, to make sure the oil does not run out, into the clutch housing.
Ciao ragazzi un saluto speciale a Ewan grande personaggio e Guzzista di lungo corso, attore eccelso di grande umiltà, tornando alla Guzzi gt è veramente bella una nuda pura, trovo paradossale che in Italia questa moto è estremamente rara, se ne trovano poche in vendita, forse perché non ha avuto successo. La provai proprio nei primi anni 90, era ben rifinita, confortevole e con una buona posizione di guida, era di un mio amico entusiasta, perché amava molto le moto nude senza carenature e prediligeva le strade provinciali per ammirare il paesaggio, odiava le autostrade considerandole piuttosto monotone. Grazie di cuore per mantenere vivo questo mitico marchio ciao e buon lavoro.

It would be so easy for Moto Guzzi to make a new version, simply by taking the base of the V7 850 and making aesthetic changes, so easy! It would be beautiful!
Bellissima moto curata in ogni particolare, adoro i freni a tamburo doppia camma che montavano anche la Ducati, Laverda e la Benelli Tornado. Era d'oro del motociclismo mondiale, avevo 11 anni bellissimi ricordi di gioventù. Molto belle le manopole che hai montato, il manubrio era regolabile in altezza, assecondando l'uso personale, ciao amico Guzzista e buon viaggio.

If you ever come to ride here in Brazil you gonna have a lot of fun. The country is huge and we have endless roads and pretty breathtaking sights. But I must say that beeing a History of Art researcher myself I can't help also loving your country too. Moto Guzzi are bikes you don’t buy and add, but you collect. Something about them once you have one in your possession, it’s very difficult to let them go. Be careful because once you buy one, then you’ll buy another, and before you know it you’ll have a small museum collection of Moto Guzzi 🦅 ❤️
