Shunji Nakao left Japan well equipped as a master sushi chef and descended upon Los Angeles in 1984. He soon started working along side Matsuhisa Nobu until 1987 when Matsuhisa Nobu opened up his own place called Matsuhisa located in Beverly Hills and that's when Shunji and his brother Tetsuya joined in to open up this new restaurant with their friend.
Shunji and his brother Tetsuya were 2 of 4 sushi chefs that worked at the very first restaurant owned by Matsuhisa, and as they say, the rest is history.
Today, Tetsuya owns a very successful restaurant he and Shunji opened in 1991 called Asanebo; located in Studio City; it is one of the top rated Japanese restaurants in the LA area. They received their first Michelin Star in 2008 and their second Michelin Star in 2009. The place is very pricy but well worth the visit I am sure; that will definitely be a place to visit the next time we are in the LA area so stay tuned for our video.
On our recent visit to Shunji Japanese Cuisine restaurant, we were enamored with his food preparation and skillful arrangement of our Omakase dishes. Never have we experienced dishes that tasted like this, nor have we seen such beautifully created edible art. Our favorite dishes were the Japanese A5 Wagyu beef dish and the Summer and Black Truffle rice, as well as the live sweet shrimp sushi dish. Even the Sweet fish was amazing as everything truly was. Everything that came across our table was enjoyed to the fullest and we highly recommend a visit.
If you're looking for a true Japanese Omakase experience, this is the place to stop by but make sure you can take a seat in front of Master Sushi Chef Shunji; all of the other chefs are extremely talented but there's just something special about Shunji's hands creating dishes you can't wait to taste.

About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on RU-vid.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

I absolutely love this series. It's hard to come across people who work so diligently just to see a smile on a customer's face. I highly enjoy watching Chef Hiro make his craft, and I highly enjoy watching other individuals in the same service showing their creativity. As a sushi lover myself, some of the dishes I have seen on this channel should be framed for everyone to see.

Uni is just the best. I highly recommend for your first Uni, you should go to a good sushi restaurant and try it... Because some people try bad Uni one time and they would think all uni is bad.. If you can get good quality uni, you would fall in love.

Forgive me if this is a stupid question, but it's one that's always bugged me. Are you supposed to eat everything that's edible when served to you, or are only certain parts to be eaten? Like what part of a sushi plate is purely ornamental (even if edible) and what's not

Not quite. Garnishing's like miso leaves (seen in many sushi spots, even plastic versions) or the small leafed twigs he put on the plate are not to eat. When ordering a whole item, sometimes they will also present it with the head to the side. In extreme cases such as turtle, frog, octopus, squid...no. It is for presentation to show the freshness. IF al else fails...ask them. That is what they are there to do, assist you in having a pleasant meal and experience.

I've never had such a high quantity of truffle in one dish. Is it something that gets too rich and overwhelming or is it enjoyable the entire time? I only ask because I sell truffle salt at my shop an even packaging it the scent gets a little overwhelming. Outside of that this entire meal looks to die for. Cheers!

Check the victorinox fibrox, its cheaper than your budget but its great knife, also buy sharpening stones and proper cutting board

Call me a clueless pleb, but is it really safe to eat freshly harvested fish and shellfish raw (or meats in general) without any pre-processing? I heard the raw meats undergo some intense freezing process for killing parasites, the process of curing also gives extra safety, but I also know that the best sashimi should be alive and kicking... :x

All sea fish have some type of parasite(s). Most have thin worms. It won’t necessarily make you ill from eating it, however you may get sick at the sight of them dancing across and in the meat. There are several methods of killing it be it irradiation (strong x-ray), flash freezing, or simply picking them all out with thin pliers or forceps. Some sushi chefs have taken to an extreme flash freezing process (very costly) which does not damage the fish at all. Sashimi not live fish, it is unadorned raw fish or seafood (no nori etc.) The live seafood you refer are novelty live dishes such as baby octopus, squid, eel, sweet fish etc. It’s going to taste almost the same except it moves around in your mouth, so in all likely hood you won’t even be thinking flavor. If your a collage frat boy, then go for it., otherwise it is pretty foolish. People have choked and died simply from trying this gross factor (do it to say you have nonsense),

I'm not vegetarian or anything but eating animals that are still alive is cruel as fuck, even if it's just a simple shrimp. Imagine that somebody chops your legs off and leaves you on a plate for a giant shrimp to eat. I'd rather be dead for an experience like that.

Real deal? Since when are truffles part of Japanese diets? That is like adding gold foil to dessert. It is a money dish. Not at all authentic. The rest shown could pass. He gets paid for the creativity of formulating “Americanized” sushi dishes.
