Recipe:
Ingredients:
Sugar 1 cup
Elaychi Powder 1 TSP
Water 1/2 Cup
Ghee 4 TBSP
Ice Cubes 4-5 Nos
Milk 1 Cup
Maida 2 TBSP
Cold Water 1 Cup
Besan 1 TBSP
lemon Juice 1 TBSP
For Rabri
Saffrom 10 - 12 Strainds
Mawa 1/ Cup
Sugar 1/4 Cup
Method:
For sugar syrup
In a non-stick pan add sugar, green cardamom powder, water, and boil it to make light sugar syrup.
For rabdi
In a sauce pan boil the milk and reduce it till 60%.
Add mawa, saffron, sugar and reduce the rabdi mixture.
For batter
In a grinder put ghee and ice cube and grind it to make one smooth mixture
Now add milk and flour little by little in mixture and continue grind
And keep the ghewar batter on ice bowl to maintain the ghewar temperature.
Heat oil in a shallow kadahi, pour the mixture little by little .
Fry till it is crispy brown.
For finishing
Put sugar syrup on ghewar and pour rabdi on it and finish with chopped dry fruits and saffron.
Serve the ghewar immediately
