Restaurant Style Moong Dal Khichdi Recipe:
Khichuri is a Bengali cuisine once considered comfort food for the poor, now is a delicacy served warm in restaurants. Like similar Khichdi, core ingredients are rice and lentils, but different variations exist, some adding vegetables, poultry or meat and named accordingly (e. g. Sabji khichuri for vegetable). Here is the recipe for the popular Bhuna Khichuri with moong dal.
Ingredients:
2 cup white fragrant rice (e.g Bashmati or Pilau rice)
1 cup moong dal/lentils
1 tablespoon butter preferably ghee
1 teaspoon turmeric powder (to give the dish a vibrant yellow colour)
3 whole green chilis
1 bunch coarsely chopped fresh coriander leaves
5 cups of water for boiling
Fried onion
Salt according to taste
Spices for seasoning:
1 bay leaves
2 cardamom pods
2 sticks of cinnamon 1 inch long
1 teaspoon cumin seeds
1 tablespoon ginger paste
1 teaspoon garlic paste
Oil for cooking:
1/4 cup of oil
1 tablespoon of ghee
For garnish:
Fried onion ( shown in the video, how to prepare perfect fried onion)
Chopped fresh coriander leaves
