Today's video presents North Karnataka side dish called Badanekayi ennegaayi, made by using tiny, colorful brinjals. It is made by stuffing a masala of chopped tomatoes & onions, crushed peanuts and sesame seeds and the items required for taste. Enough oil is required to make it because after stuffing, we will have to fry the stuffed brinjals. This process enhance its taste. This dish also made without stuffing the masala, as usual we make any other curries. But this method is a special one. This can be combined with roties and chapathis and goes well with hot rice too.
Ingredients:
Brinjals- 1 kg,
ground nuts - 1 cup,
black& white sesame seeds/ Niger seeds- 3 tsp together.
onions-2-3,
tomatoes 2-3,
coriander leaves and curry leaves,
ginger garlic paste 2 tsp,
salt, a piece of jaggery,
turmeric powder,
red chilly powder.
Oil-1 cup,
mustard seeds 2 tsp
