Sambar can prepared with different varieties of vegetables individually or in combination. It has boiled dal compulsorily. Consistency is thick. Saaru or rasam is generally prepared with very few veggies. For ex, most common is tomato. Though some special varieties like jackfruit seed rasam, etc r there, mixed vegetables are not used. Consistency is very thin and boiled dal is not mandatory. Saaru or rasam is generally served first with rice, then comes sambar rice and lastly curd rice. Rasam is very spicy compared to sambar and hence it is digestive. Sometimes rasam is consumed like soup in rainy season to fight cold n provide heat to the body through spices in it.
