Im making this during the winter time so its cold outside, should I have the shrimp ferment longer? It's still sunny out but it's cold. Should I leave it on the kitchen counter at room temperature?
Fermenting food, It's very good to all people (original ethnic group of people). The most important is your equipment must be clean and shine. If you smell something funny please discard and start over again. when you eat fermented food, you should smell like one, if not, don't! You know what meant, right? Safety for your health is the goal!!!
You’re right, bongkea is bay shrimp, which is a lot smaller than you have now. Bong Kong is prawns and lobster is bongkong samuth. Keep up the good work.

Hi, I would like to follow your recipe. But, do I have to leave the shrimp in the sun? I live in the east coast and it’s now starting to get cold. Can i just put the shrimps in a jar and leave it in the house?
Can I leave the shrimp in the sun for just 1day or 2 then mix it with the papaya ? Also when I’m done do I leave it in the refrigerator so the flavors can kick in ?
I saw a different way to make mam lahong by using this brine called Vietnamese Mam Ca Sac Xay , is that way just an alternative for this or is it different taste wise?
I saw some people do that too because I think it's faster and easier but I've try it. Taste wise, I think it's might be different because if you make your own shrimps it more flavorful and better texture.

Cooking with Elissa either one, you speak both Khmer and English are perfect, but when you speak Khmer and than English just feel you repeat and make the time longer.
