Fried rice is a common dish, looks easy to cook but difficult to fry to perfection!
Step 1
Freeze cooked rice in refrigerator overnight, prepare diced green onions, ginger rice and 3 eggs.
Step 2
Defrost overnight rice, use hand to stir in 3 eggs until you see each grain of rice.
Step 3
Add oil to heated wok, fry ginger rice until fragrant, gradually add oil in small amount, put aside.
Step 4
Add oil to heated wok, add egg and rice mixture, fry till rice grains bounce at the edge, splash small amount light soy sauce from wok edge, add ginger rice and fry to mix well, season, add diced green onions and stir fry, ready to serve.
