材料 Ingredients (九件/9 pieces)
一百八十克高筋麵粉 180g Bread flour
兩隻大雞蛋(淨重一百一十三克)2 eggs (113g)
二十克牛油溶液 20g melted butter
二十五克生粉 25g potato starch
八分一茶匙幼鹽 1/8tsp salt
半茶匙梳打食粉 1/2 tsp baking soda
適量烤了的核桃 walnuts
一湯匙炒香了的芝麻 1tbsp sesame seeds
一湯匙半椰絲 1.5tbsp coconut flakes
一百三十克麥芽糖 130g maltose
九十克白砂糖 90g sugar
五十毫升清水 50ml water
正方形錫紙盆(直徑八吋,兩吋高)8 inch square tin (2 inch high)

現在才知馬仔可以這樣香脆 由細到大 都是食包裝好的馬仔 淋淋的 因有糖膠的關係 只会帶点点煙靭的感覺 看來 如果想吃脆脆的馬仔 就要自己動手做了 街外根本買不到這樣高質素的馬仔 張媽媽超捧 超叻 超讚

Sorry is it 2 eggs or it’s it eggs that has to equal 113grams? Also does it have to be potato starch or can corn starch work? And my mom eats the ones with onions in them, how does that work?

Hi Mama Cheung 有一問題是,你量牛油和strong flour 的 grams 份量,是否已跟隨它們的種類來量的呢? 以我所知D D是,普通麵粉和strong flour 粉的量度有所不同,是否照足你的份量量即可呢?

I tried this recipe. It is really very delicious.TQ very much.Not sweet and the flavour of egg is pundent.You have to be very careful when cooking the syrup.

張媽媽,今天跟你食譜做了薩琪瑪,食譜好ok, 但我炸麵條時,炸第一轉金黃色,到第二轉好快變黑,唔同你係示範時炸幾轉都咁靚,應該出現什麼問題呢?我用了雪平鍋

你好👋可能油溫太高,所以會炸濃了,如果油溫過高,炸第二次是便要將火關掉,待幾分鈡後,放一小片生的麵條試試油溫,如果ok便可以再次炸了,記得用中大火,不要用最大的火,否則會炸燶的,謝謝支持😊👍💕

Thank you for sharing Mama Cheung, I made it before but the recipe that I have used normal flour , may I know what is the differences between normal flour and bread flour ? As bread flour is more expensive and hard to buy in Penang. Thank you

Can I use cornstarch in place of potato starch? They only potato starch that I can find where I live is of very poor quality which contains gritty bits inside.

S Mapelish the way the pep. goes , I would just replaced the potato starch to corn starch , why not , if it goes wrong , you are not alone , so shoot me !!
