啤水 (i.e. put them in a container, cover with water and drip running water on it) for a few hours, this would plump them up, make them crunchy (玻璃蝦球) but also wash away the taste of the shrimps, not to mention wasting water. To conserve water, submerge shrimps in cold water and put in fridge & change the water a few times over several hours.

crispy noodle is the main part of this dish, I would put in addition some chicken stock(or osyster sauce plus little of dark sauce) plus soya with spring onion as my syrup on top of my noodle. That will taste much better. I notice you don't to use too much oil, me too.

I use airfryer no oil for my crispy noodle 2 minutes a side.

睇見就想食,買齊食材,照做。請問煎麵,是否中火每面煎二分鐘?可否用易潔鑊呢?謝謝妳。

我用的鑊, 除咗係鐵鑊之外, 仲係中式鑊, 用油集中在中間, 所以不需用太多油, 用平底鑊可以, 但油的份量要按需要加多一些, 用中大火至中火燒熱油之後, 用我影片中的方法, 就可以煎麵, 不需計時間, 第一次煎兩邊微黃, 倒出多餘的油份之後再煎, 第二次煎到金黃, 易潔鑊耐熱小心煎燶。 希望你是主成功👍😀

Bobo - Instead of frying the noodles in a lot of oil, crisp them up in a panini press, a George Foreman or similar grill with just a little oil or no oil.

How come you feel this time so bitterbored? To me it is the best so happy so quarantine calm quite easy. Less traffic people anxiety bombard. Except for the protest loot thugs violence. If you lockdown curfew at home it would be fine. The best quite free peace full quality time in one s life.
