Thanks for sharing this lovely recipe . Yee mee is my favorite noodles , never tried this way of cooking , normally I cooked yee mee in Cantonese style . Now I got a new way of cooking this noodles . By the way I had following up your way of preserved salted duck eggs few days ago , hopefully in a couple of weeks I be able to try it . Will let you know the result . Thanks again .
The way you scald the yee meen is good. 50 percent cooked so it does not breakup when you refry it again. Tips like this can do wonders to a dish especially to novice cooks like my young grandkids.
