【三杯雞】3 Cup Chicken/Sanbei Chicken
其实,大江南北都有所谓的“三杯鸡”,唯独台湾的“台式三杯鸡”最为出名,有些地方会把这道菜当作月子餐,因为食材里头用了大量的姜、麻油和米酒。今天,我将以“马式三杯鸡”的煮法与大家分享。
三杯鸡里头的“三杯”,即:米酒、麻油、生抽。
其实,料头里面我也用了大量的“三宝”,即:姜、蒜、葱头仔,这些食材我都以“块状”来煸香,把它们爆出香气,才捞出备用。接着,把鸡肉用“姜蒜葱”油来煎香,最后才倒入“三杯”焖煮半小时。这样的煮法超香的,单单用汤汁和“三宝”捞饭,就可以吃上好几碗饭!

食谱 Recipe
1)鸡肉 | Chicken - 750克 | 750g
2)白米酒 | Rice Wine - 150毫升 | 150ml
3)麻油 | Sesame Oil - 2汤匙 | 2Tbsp
4)生抽 | Soy Sauce - 2汤匙 | 2Tbsp
5)红辣椒 | Red Chili - 2条 | 2Pcs
6)生姜 | Ginger - 40克 | 40g
7)蒜头 | Garlic - 15瓣 | 15Cloves
8)葱头仔 | Shallot - 15粒 | 15Pcs
9)冰糖 | Rock Sugar - 1汤匙 | 1Tbsp
10)香菜 | Coriander Leave - 1把 | 1Bunch
11)油 | Cooking Oil - 1~2汤匙 | 1-2Tbsp
鸡肉腌料 Chicken Marinating
12)盐 | Salt - 1/2茶匙 | 1/2Tsp
13)糖 | Sugar - 1/2茶匙 | 1/2Tsp
14)胡椒粉 | White Pepper - 少许 | Few Dashes
15)生抽 | Soy Sauce - 1茶匙 | 1Tsp
16)生粉 | Corstarch - 1茶匙 | 1Tsp
【3 Cup Chicken/Sanbei Chicken】
In fact, there are so-called "three cups of chicken" in the Chinese Region, but Taiwan’s "Taiwanese three cups chicken" is the most famous. Some places treat this dish as a confinement meal because a lot of ginger, sesame oil and rice wine are used in the ingredients. Today, I will share with you the "Malaysian-style three-cup chicken" cooking method.
The "three cups" in the three cups of chicken are: rice wine, sesame oil, and light soy sauce.
In fact, I also used a lot of "three treasures" in the raw material, namely: ginger, garlic, and shallot. These ingredients are cut in chunky shape, and then stir-fry till fragrant, and then they are taken out for next step. Next, pan-fry the chicken with "ginger, garlic, shallot" oil, and lastly pour it into "three cups" and simmer for half an hour. This kind of cooking method is super fragrant. You can eat several bowls of rice just by eating with the gravy and the "three treasures"
