我只用一粒蛋 放馬克杯 微波12秒 加入95度熱水 蓋蓋子 (我用一個碗當蓋子,直接疊上去,封住開口) 等7分鐘 取出 蛋清軟像豆腐花 蛋黃有點糖心 正中間全熟

My recent made clear soup, taste delicious on any noodles especially Flat Rice Noodles (Kway Teow) and Rice Vermilli (Bee Hoon). Recepi. One Pot Water (10 Rice Bowl Serving) 1. Stir Fried Boneless Anchovies (sufficient amount) 2. 2 Big Onion (Diced) 3. Half or 1/3rd Part Whole Cabbage 4. 2 Diced Carrots 5. 1 Clean Chicken Carcass (chopped & blanc). 6. 2 Green Onions (2 knots) 7. Seasoning: a) Rock Sugar (right amount) b) Salt to taste (Pink Salt or common salt) c) Abalone Sauce (Bottle) 2-3 Tbsp d) Fried Garlic (1 Tbsp). Soup : 1st Boiling (0.5 hours) and small medium boil (0.5 Hours). Add water if needed. I stir fried clean anchovies in some fried garlic oil till fragrant, add blanc chicken carcass and all soup vegetables ingredients, add water (10 rice bowl). When boiling, transfer to induction cooker simmer in low heat 40 minutes. Sieve soup water only. Pack in 10 Serving pack size, freezer. Just take out from freezer put in tap water bowl. Ice will desolve quickly, open pack and boil soup in soup pot. Boiling soup, pour in readied noodles with meat, egg & vegetables (choy sum) and blanced beans sprout. Toppings: 1. Dash of white pepper powder (ajinomoto) 2. Fried Garlic & Fragrant Oil (2-3 Tbsp) 3. Green Onion (chopped). Optional: Diced Fried Pork Lard & Oil also ideal toppings. Soup also ideal for 1. hot pot or steamboat 2. Stir Fried Noodles Gravy 3. Clear Soup Noodles 4. Vegetables Quick Soup Base : 1. Watercrest w/ pork meat slices 2. Spinach egg drop meat slices 3. Tong Ngo egg drop meat slices 4. Dry Seaweed Egg Drop meat slices 5. Romane Lettuce 6. Steam Soup with variety chinese herbs and dry seafood ingredients

熱雞蛋拿出來還是在“自煮”的,等的時候應該浸在冷水裡才合理。

烫热的雞蛋浸在冷水,這樣做的話會導致雞蛋降溫從而影響半熟效果🤔

EZ,这个炸鸡需要提前腌制吗?从视频步骤来看是,鸡料清洗干净就开始裹粉+面糊+粉,就下锅炸。

baking powder 不是见水就反应挥发走了吗?为什么粉浆要加baking powder?

就是因為有「揮發」作用,從而在粉漿里產生汽泡而使其酥脆

This is based on 4 eggs, i prefer 7 minutes. But if you do more eggs like 8 or 10, leave it for 1 more minute

至於過了第五分鐘時間之後,熱水的溫度大概下降到 80° 度或以下,接下來的時分增添,只是再度醞釀鷄蛋熟度而已。 如果一開始你只燙一粒或兩粒鷄蛋的話,那首度 100° 熱度的熱水,在灌入後直接燙到八分鐘的話,基於水多蛋少的因素,那麼出來的效果就肯定不一樣了,雞蛋相信會過熟,變成 80% 或以上的全熟蛋了 。 你這種接力方式的那第八分鐘,是因為被之前那三粒鷄蛋前後分散了熱水的溫度,因此才能達到這樣 OK 的效果。 製作完美的生熟蛋,主要是那個蛋黃沒有出現過熟形成塊狀,依然保持流沙狀態就是最好;而蛋白的部份不能還存有蛋清,全部呈現類似豆腐花狀態就是最完美的 。
