【參巴辣椒酱】Sambal Chili Paste
根据维基百科诠释:
叁巴醬(馬來語:Sambal),是一種廣泛流行於東南亞(馬來世界)以至南亞地區的一種特殊辣椒醬,其經常運用於娘惹菜以及街邊小吃之中(例如咖哩叻沙)。由於叁巴醬源自家常菜的調味方式,因此在製作醬料時所採用的香辛料及食材也因個人喜好與烹飪用途而各有不同,具體差異可達十多種口味類型。
几年前第一次自己尝试煮Sambal(当时觉得凭记忆,没去请教妈妈)为了容易把辣椒搅烂而加了水。刚下锅煮没多久,辣椒酱因受热而四处乱溅,弄得「危机四伏」担心喷到眼睛,整个炉灶喷到全是辣椒。
记得煮了好久,应该有超过1小时,都没法把sambal煮到出油,越煮越不对劲(煮到差点荷尔蒙失调😆)结果,整锅辣椒变得又干、又黑,全败了。。。打电话问妈妈,才知道用搅拌器搅辣椒时,是“放油”而不是“放水”。
所以,今天制作了一集,讯息量蛮多的一集(有点长气😅😅),与大家分享,减少走冤枉路。

食谱 Recipe
1)辣椒干 | Dried Chili - 50克 | 50g
2)洋葱 | Onion - 50克 | 50g
3)蒜头 | Garlic - 50克 | 50g
4)南姜 | Galangal - 30克 | 30g
5)江鱼仔 | Anchovies - 50克 | 50g
6)椰糖 | Palm Sugar - 130克 | 130g
7)油 | Cooking Oil - 1杯 | 1 Cup
8)亚叁膏 (罗望子) | Tamarind Paste - 2茶匙 | 2Tsp
9)盐 | Salt - 1/2茶匙 | 1/2Tsp
【Sambal Chili Paste】
According to Wikipedia interpretation:
Sambal paste (Malay: Sambal) is a special chili paste widely popular in Southeast Asia (Malay world) and even South Asia. It is often used in Nyonya cuisine and street food (such as curry laksa) . Because sambal sauce is derived from the seasoning method of home cooking, the spices and ingredients used in the preparation of the sauce also vary according to personal preferences and cooking purposes. The specific differences can reach more than ten types of flavors.
Vaguely remembered that I tried cooking Sambal by myself for the first time a few years ago (I thought it was from memory and I didn't ask my mother) and added water while blending the ingredients in order to easily mash the chili paste. Not long after it was boiled in the pot, the chili paste was splashed all over the kitchen stove, and worry about spraying towards my eyes, the whole stove was sprayed with chili paste.
I still remembered it took quite a long time to cook the Sambal, it should be more than 1 hour, the sambal was not cooked thoroughly to release the chili oil, the more I cook it, the more wrong it is. As a result, the whole pot of chili paste became dry and black, and it was completely defeated. . . I called my mother and found out that when using a blender to blend the ingredients, I should pour in the cooking oil instead of water.
So, today I made an episode with ton of information (a bit long 😅😅), to share with you, to reduce the wrong way.
