🌴 毛姐咖哩薯仔炆牛坑腩 🐮
材料:
●800克 牛坑腩
●2個 薯仔
●1條 紅蘿蔔
●1個 洋蔥
●2粒 紅蔥頭
●2粒 蒜頭
●2片 月桂葉
●1條 百里香
● 2湯匙 咖哩醬
● 1湯匙 沙茶醬
● 1湯匙 黃薑粉
●1罐 椰漿
● 2湯匙 牛油果油
● 2湯匙 味醂
● 1湯匙 生抽
● 1湯匙 老抽
● 4湯匙 阿洛酮糖 (11⁄2湯匙白砂糖)
預備:
● 牛坑腩飛水後切件
● 薯仔, 紅蘿蔔去皮切塊 ● 洋蔥切粗條
● 紅蔥頭, 蒜頭切碎
方法:
● 選擇“Sauté/Sear” (煎炒)程序
● 選擇 “Timer” (時間), 按 “+” 至15分鐘
● 按 “Start” (開始)
● 鍋內加入少許油
● 當高速萬用煲發出提示音, 說明油已熱, 在鍋內加入薯仔煎至微
焦 (5-10分鐘), 取出備用.
● 鍋內下油爆香洋蔥,
● 加入紅蔥頭碎, 蒜頭和紅蘿蔔
● 加入咖哩醬, 沙茶醬, 黃薑粉, 生抽, 老抽和阿洛酮糖炒勻
● 加入牛坑腩和紅蘿蔔, 贊味醂後不斷炒2分鐘
● 加入薯仔, 拌勻
● 加入大半罐椰漿拌勻至煮滾
● 加入月桂葉和百里香
● 關上煲蓋, 然後取消 “Sauté/Sear” (煎炒) 功能
● 按下 “Pressure Cooker” (高速煑) 按鈕,
● 選擇 “Beef/Lamb” (牛羊) 功能
● 按“Timer” (時間), 在 + - 鍵上選擇45分鐘
● 按下 “Pressure” (壓力/溫度), 在 + - 鍵上選擇 “P70”
● 鎖緊煲蓋, 然後按 “Start” (開始) 按鈕
● 當程序完成後, 打開煲蓋, 檢查醬汁濃稠度.
● 選擇 “Sauce Thickening” (收汁) 功能
● 在煲蓋打開的情況下加入椰漿
● 讓醬汁蒸發數分鐘至自己認為理想的濃稠度

800ɢ Beef brisket
xᒿ Potatoes
x1 Carrot
x1 Onion
xᒿ Shallots
xᒿ Garlic cloves
xᒿ Bay leaves
x1 Thyme sprig
2 ᴛʙꜱᴘ Curry paste
1 ᴛʙꜱᴘ Shacha sauce
1 ᴛʙꜱᴘ Turmeric powder
1 ᴄᴀɴ Coconut milk
2 ᴛʙꜱᴘ Avocado oil
2 ᴛʙꜱᴘ Mirin
1 ᴛʙꜱᴘ Light soy sauce
1 ᴛʙꜱᴘ Dark soy sauce
4 ᴛʙꜱᴘ Allulose (ᴇQᴜɪᴠᴀʟᴇɴᴛ ᴛᴏ 1 1⁄2 ᴛᴀʙʟᴇꜱᴘᴏᴏɴꜱ ᴡʜɪᴛᴇ ꜱᴜɢᴀʀ)
ᴘʀᴇᴘᴀʀᴀᴛɪᴏɴ:
● Blanch beef brisket & cut into pieces
● Potatoes, carrots peeled & cut into pieces
● Onion sliced
● Chopped shallots and garlic
ᴍᴇᴛʜᴏᴅ:
● Select the "Sauté/Sear" program
● Select "Timer" (time), press "+" to 15 minutes
● Press "Start"
● Add a little oil to the pot
● When the high-speed universal cooker emits a beep, it means
that the oil is hot, add potatoes to the pan and fry until slightly
charred (5-10 minutes), and take it out for later use.
● Add oil to the pan and sauté the onions,
● Add chopped shallots, garlic, and carrots
● Add curry paste, shacha paste, turmeric powder, light soy
sauce, dark soy sauce, and allulose and stir well
● Add beef brisket and carrots and mirin, stir fry 2 minutes
● Add potatoes, mix well
● Add half a can of coconut milk, mix well and bring to boil
● Add bay leaves and thyme
● Close the lid, then cancel the "Sauté/Sear" function
● Press the "Pressure Cooker" button,
● Select the "Beef/Lamb" function
● Press "Timer", press +- keys to 45 minutes
● Press "Pressure" (pressure/temperature), select "P70" on
the +- keys
● Lock the lid, and then press the "Start" button
● When the program is completed, open the lid to check the
consistency of the sauce.
● Select the "Sauce Thickening" function
● Add coconut milk with the lid open
● Thicken the sauce for a few minutes until desired
consistency
