Amazake is not alcohol so different taste. Rice wine has a lot of Lactic acid bacteria so yogurt doesn't change taste so much. You can make it without yeasts but more difficult and takes time.

I think if you like the texture no problem. Once it got fermented it's not going bad. Homemade tastes better! Enjoy :)
食感が好きですね、There was a kind of doburoku that I got in Japan it was mostly rice and almost like a pudding but not quite. I was wondering if the left over rice is what's put in?
@@Nighteye88 Japanese people usually use left over rice, 酒粕(さけかす) for other dishes and drinks such as 甘酒(あまざけ). I like eating Yogurt with 酒粕. If I put back lees into the wine again, I would make it more smooth by blender before put it back. I haven't tried it out though. hahah
