洋蔥滑雞粒
材料:
急凍雞扒2塊
冬菇4隻
洋蔥一個
薑一小舊
處理:
1. 雞扒,清水解凍。
2. 冬菇,加入大滾水浸。
3. 薑,去皮,切片。
4. 洋蔥,去皮,切一條條。
5. 雞扒已解凍,除去雞皮及肥膏,切粒。
6. 雞粒,加入粗鹽一茶匙,乸5分鐘,去除雪味、腥味,及加入少許鹹味。
7. 雞粒,清水沖洗乾淨,擎乾水。
8. 冬菇,去椗,切絲。
9. 雞粒,廚紙索乾。
10. 雞粒調味:
a. 生粉3茶匙
b. 油一湯匙
c. 胡椒粉適量
d. 生抽一湯匙
e. 鮑魚汁一湯匙
撈勻,醃10分鐘。
11. 預備芡汁:
a. 糖一湯匙
b. 鮑魚汁一湯匙
加入清水300毫升,攪勻。
烹調:
1. 大火在鑊中燒熱油一湯匙。
2. 爆香薑片。
3. 加入洋蔥片,炒勻,同時加入冬菇爆香。
4. 加入油一茶匙,炒勻至金黃色。
5. 加入芡汁,冚蓋,大火滾起,燜2分鐘。
6. 加入雞粒,炒勻,冚蓋,燜4分鐘。
7. 打開蓋,炒勻雞肉,冚蓋,再燜多2分鐘。
8. 完成,上碟,可享用。
Braised chicken cubes with onion
Ingredients:
Frozen chicken steak 2 Nos.
Mushrooms 4 Nos.
Onion 1 No.
Ginger (small) 1 No.
Preparation:
1. Chicken steak, defrost in tap water.
2. Mushrooms, soak in boiled-up water.
3. Ginger, get it peeled and sliced.
4. Onion, get it peeled and shredded.
5. The chicken has been defrosted, remove skin and fat. Dice in cubes.
6. Chicken cubes, add in 1 tsp of cooking salt, season for 5 minutes, to remove unpleasant smells and add some salty tastes to it.
7. Chicken cubes, rinse thoroughly. Drain.
8. Mushrooms, remove stalks. Get them shredded.
9. Chicken cubes, dry with kitchen towels.
10. Chicken cubes, add seasoning:
a. Tapioca starch 3 tsp
b. Oil 1 tbsp
c. Pepper appropriate amount
d. Light soya sauce 1 tbsp
e. Abalone sauce 1 tbsp
Mix well. Season for 10 minutes.
11. Prepare sauce:
a. Sugar 1 tbsp
b. Abalone sauce 1 tbsp
Add in 300ml of water, mix well.
Steps:
1. Heat up 1 tbsp of oil at high flame in wok.
2. Fry ginger well.
3. Add in shredded onion, fry well. Add in the mushrooms at the same time, fry well.
4. Add in 1 tsp of oil, fry well until they turn into the colour of golden yellow.
5. Add in the sauce, cover up the wok. Heat up at high flame and braise for 2 minutes.
6. Add in the chicken cubes, fry well. Cover up the wok and braise for 4 minutes.
7. Open the lid, fry the chicken well. Cover up the wok and braise for 2 minutes more.
8. Complete. Put on plate. Serve.
