🟢材料:
苦瓜 600克
豆豉鯪魚1罐 227克
蒜頭 2瓣
薑 1小塊
紹興酒 1湯匙
糖 1茶匙
鹽 適量
🟢做法:
1️⃣ 苦瓜洗淨去瓤,切件,可用鹽揉搓去除苦味,或將其汆水2分鐘。
2️⃣ 將豆豉鯪魚的魚骨挑出,弄成小塊。
3️⃣ 爆香薑蒜,加入豆豉鯪魚炒香,加入苦瓜翻炒,加入1茶匙糖,適量的鹽,1湯匙紹興酒,鍋蓋蓋上焗10秒,翻炒均勻出鍋。
🟢Ingredients:
Bitter Gourd - 600g
Canned Fried Dace with Black Beans - 1 can (227g)
Garlic - 2 cloves
Ginger - 1 small piece
Shaoxing Wine - 1 tablespoon
Sugar - 1 teaspoon
Salt - as needed
🟢Cooking Directions:
1️⃣ Wash and deseed the bitter gourd, cut it into pieces. Rub with salt to remove bitterness, or blanch in boiling water for 2 minutes.
2️⃣ Remove the fish bones from the canned fried dace, break it into small pieces.
3️⃣ Sauté ginger and garlic, add the canned fried dace, stir-fry until fragrant. Add the bitter gourd and stir-fry, add 1 teaspoon of sugar, salt to taste, and 1 tablespoon of Shaoxing Wine. Cover the wok for 10 seconds, stir evenly, and serve.
