NO-KNEAD SOFT FRENCH BREAD Tasty & Soft White Bread By Baker's Channel Ingredients 240 g Bread flour 1.5 g Instant Dry Yeast 4.8 g Salt 2.4 g Butter Unsalted (softened) 156 g Water (pure, room temp) Directions 01. In a bowl, place bread flour, yeast and salt distant of each other. Mix the dry ingredients, lightly. 02. Add water and butter. Mix all the ingredients, until they are blended, moistened and form a dough. 03. Place dough in a container, cover it with plastic wrap and lid to prevent dough drying. 04. Let it rest for 60 minutes, at room temperature (27 °C) or 45 minutes at (30 °C). 05. Or refrigerate the dough for 12 hours, long fermentation at low temperature (5 °C). 06. Dust the dough and board with flour, lightly. Transfer the dough to the board and strenghten it. (Deflate, fold, roll on the side several times and shape it into a ball). Cover it with the bowl. 07. Let it rest for 45 minutes, at room temperature (27 °C) or 30 minutes at (30 °C). 08. Dust the dough and board with flour, lightly. Transfer the dough to the board, deflate and cut it in 2 pieces of equal weight. Close edges, roll and preshape each piece into an oblong loaf. Cover them with the bowl. 09. Let them rest for 30 minutes, at room temperature (27 °C) or 20 minutes at (30 °C). 10. Dust the loaves and board with flour, lightly. Final shape each bread (Flat, fold, seal, turn 180° and repeat, press the edges, roll it into an oblong loaf about 20 cm (8 in) long and close the seam tightly). 11. Arrange them evenly, in a baking sheet, lined with parchment paper. 12. Final fermentation: Let them rest for 50 minutes, at room temperature (30 °C). 13. Dust the loaves with flour, lightly. Using the baker's blade, score each bread 5 times diagonally. Bake the loaves of bread in pre-heated oven at 250 °C (482 °F), with steam, for about 15 to 16 minutes.
