🟢材料:
薑100克
沙薑60克
蔥50克
紅蔥頭20克
蒜頭20克
芫荽(香菜)20克
青檸2個
辣椒3隻
生抽適量
黑醬油/黑豉油適量(海南雞豉油)
鹽 適量
🟢食白切雞的五種醬料
1️⃣ 薑蔥蓉:
薑切幼粒,如磨薑蓉要把薑汁擠出, 蔥切幼粒,加入適量鹽,灒熱油拌勻。
2️⃣ 紅蔥頭豉油:
芫荽切碎,紅蔥頭切碎,薑切幼粒,灒熱油,加入適量生抽拌勻。
3️⃣ 沙薑醬:
沙薑拍碎切幼粒,加入適量鹽,灒熱油拌勻。
4️⃣ 海南雞飯辣椒醬:
辣椒、蒜頭、薑放入蒜臼(或攪拌機)研磨成蓉,加入適量青檸汁,半茶匙糖,少許鹽拌勻。
5️⃣ 海南雞飯黑(甜)豉油:
東南亞商店或超市有售。
🟢Ingredients:
Ginger - 100g
Sand ginger - 60g
Spring onions(scallions) - 50g
Shallots - 20g
Garlic - 20g
Coriander - 20g
Limes - 2
Chili peppers - 3
Light soy sauce - as needed
Dark/black soy sauce (Hainanese chicken sweet soy sauce) - as needed
Salt - as needed
🟢5 Sauces to Serve with Poached Chicken
1️⃣ Ginger and Scallions Sauce:
Finely chop ginger and spring onions. Squeeze out the ginger juice. Add salt and pour hot oil over the mixture. Mix well.
2️⃣ Shallot and Soy Sauce:
Chop coriander, shallots, and ginger into small pieces. Pour hot oil over the mixture add soy sauce and Mix well.
3️⃣ Sand ginger Sauce:
Finely chop sand ginger and add a suitable amount of salt. Mix with hot oil.
4️⃣ Hainanese Chicken Rice Chili Sauce:
Mash chili, garlic, and ginger in a mortar (or blender) to form a paste. Add lime juice, half a teaspoon of sugar, and a little salt. Mix well.
5️⃣ Hainanese Chicken Rice Sweet Soy Sauce:
Available at Southeast Asian stores or supermarkets.
