材料/Ingredients
蛋4隻 (炒前放室溫30至1小時(包括準備時間),留意放太久會出水)
4 eggs
中型急凍蝦仁7隻
7 pieces of frozen shrimps
韮黃約10條切小段
10 pieces of chives (chop into chunks)
蔥2條切粒
2 pieces of scallion (chop)
蝦仁醃料/ Shrimp marinade
鹽 1/4 茶匙
Salt 1/4 tsp
糖1/4 茶匙
Sugar 1/4 tsp
胡椒1/4 茶匙
Pepper 1/4 tsp
粟粉1茶匙
Corn starch 1 tsp
麻油1茶匙
Sesame oil 1 tsp
蛋漿調味/ Egg marinade
鹽 1/4 茶匙
Salt 1/4 tsp
糖1/4 茶匙
Sugar 1/4 tsp
胡椒1/4 茶匙
Pepper 1/4 tsp
粟粉1茶匙 + 水1/2 湯匙
Corn starch 1 tsp plus
1/2 tsp of water
做法/ Steps
1. 蝦仁浸鹽水數分鐘至解凍。
Soak frozen shrimps in salty water for few mins.
2. 再用1湯匙鹽及1大碗水浸蝦5分鐘。
Soak shrimps at a bowl of water with 1 tbsp of salt for 5 mins.
3.清洗乾淨。
Rinse well. Wipe dry thoroughly.
4. 完全抹乾水份,放雪櫃30分鐘。之後取出醃好。
Put in fridge for 30 mins. Take it out, marinade.
5. 燒熱鑊,下1茶匙油,中火炒蝦仁45秒或至全熟。
Hot pan, add 1 tsp of oil, fry at medium heat for 45 seconds or until just done.
6. 韮黃大火炒20秒.( 放於隔篩上)
Fry chives at high heat for 20 seconds.
7. 蛋用篩隔好,拌勻。
Whisk.
8. 加入調味。再加入蝦仁,韮黃,蔥花。
( 可以加入1湯匙牛奶或一湯匙生油)
Add salt, pepper, sugar, fried shrimps, chives, scallion.
(1tbsp of oil or milk is optional)
9. 燒熱鑊,下1.5湯匙油。
Hot pan, add 1.5 tbsp of oil.
油熱轉小火,加入蛋
漿,蛋凝固鏟起,疊起放於無火一邊。蛋9成熟,熄火。
Oil hot, low heat, Add egg mixture,fry until 90% done. Gas off.
Serve hot.
