족발 I Made JOKBAL for the very first time today. I have tried making quite a few different Korean Foods for my wife now, but this one was definitely the most intimidating. After doing some research I figured out the best way for me to make it. I wasn't able to actually buy pig's feet, but I did find the Hocks, which is also a part used in Jokbal. Anyways. Ingredients
2-4 kg Pork Hocks (or Trotters)
2 tbsp Fresh Ginger (For Blanching Process)
(Pouch/Infusing Basket)
1 tbsp Black Peppercorn
4 slices Licorice Root
5 Chili Peppers
1 tbsp Instant Coffee
2 tbsp Ginger
1 Cinnamon Stick
2 Bay Leaves
(Lose)
10-12 cups Water
1 Garlic Bulb
1 Medium Onion
3-4 Green Onions
8 Pitted Jujubes
1/3 cup Soy Sauce
1/4 Rice Syrup (or Honey)
1/2 cup Mirin
1/4 cup Brown Sugar
1 Apple (unpeeled is fine)
1 tbsp Salt
3 tbsp Doenjang
Steps
Step 1: Soak the Pork for 6-12 hours, changing out the water every couple of hours. (I kept it in the fridge)
Step 2: Remove from fridge, rinse and shave the hair off. Yep that’s right, get out a clean razor and remove the hair from that piggy. Wash one final time.
Step 3: Put Pork Ginger and water (enough to cover the Pork) in a large pot and boil for 10 minutes.
Step 4: Take it off the heat and wash it one last time.
Step 5: Add the Pork, Pouch, Water, and Lose Ingredients in a large pot.
Step 6: Boil for 1 hour on medium high (Lid on) - high heat and one hour on low heat (Lid off)
Step 7: Remove the Pork from the Pot and allow to cool for 20 minutes.
Step 8: Slice the Pork off the bone and slice into quarter inch slices (or thinner if preferred) :)
Step 9: Enjoy! You’ve just made yourself Jokbal! Yay!
