It's interesting how the catches and the stops in the voiceover actually don't really hurt the video. While it's technically "unprofessional" it adds a lot to the human-ness factor and works very well with the down-to-earth style you are going for.
I highly recommend that you take some rice/groats and boil that in about 2-4 times the volume, stirring until it's all a mush then add that to the green patties, mix it up and kneed it by hand, you might not even need an egg if you add enough.
Thank you!!! I have a theory that many greens are bitter because they are alkali. So I chop my greens as finely as my "recipe" will allow, and then marinade the greens in some sort of acid. ( I also store them in a bowl of vinegar water in the fridge. For the acid marinade, I may use chopped tomatoes, lemon juice or balsamic vinegar. I believe the acid helps neutralize the bitterness.
